Your subway isnt busy, when i go subway in New Zealand there are like 5 people behind the counter and they make a line so one person will get the meat and toast it then when it comes out another person will put salads and so on

I load mine up with almost everything why not but I buy the 6” subs and get 4 sandwiches of different things so it’s like 2 foot longs all together
My guess is it was to preserve the sandwiches for someone who might eat it later in the day. Can add what you want when you want it.
