Looks like black walnut? Might be better to use something like cherry for the contrasting color. Walnut can present issues for skin sensitivity and allergic reactions. Obviously finish and glues should also consider those aspects. I tend to use shellac or linseed oil/beeswax as food-safe finishes, as well as food-safe glues, although it seems clear the epoxy will be well hidden.
