Crispy Salt & Pepper Crab Legs Recipe

  • In my last video you learned how to clean a whole crab! Once you have your crab leg lollipops, you can eat them with the mustard butter dipping sauce or you can make this delicious crispy salt & pepper crab leg recipe. This is a classic Chinese salt and pepper crab dish, made with beautiful Dungeness crab legs that are steamed, fried and then wok-tossed with ginger, scallions and plenty of hot chiles. You can also try this technique with lobster, shrimp or soft shell crab.

    Just a comment Andrew " We cook with all of our senses". Not 100% exact. Remember the Asian woman that is legally blind and won the Master Chef competition. It is true that persons that lose one sense become more powerful in their other senses. She is a rock star in my opinion. GR was blown away with her talent,

    Snow crab is best. Admittedly I grew up with access to fresh snow crab and the rest of the world had to settle for the frozen reheated.

    Would love to make this, but I don't have a Chinese restaurant quality over stove vent system. My kitchen would smell like every ingredient for weeks

    This dish confuses me. Why all the seasoning and coating when you don't eat the outside of the crab? I've seen this done with shell-on shrimp as well and once you peel it to eat it most of the seasoning and crispy coating is gone? Am I missing something?

      The end part (meat exposed) part absorbs a lot of the flavor. Crab has a mild flavor. This adds another depth to your palate. It’s sort of like eating rice with your food. Try it. We catch around 20-30 Dungeness crabs per week where we live and are constantly trying to find a new way to eat them.
