    I made these muffins over the weekend and they were stunning. I used home made filter coffee which is pretty common in India and used a combination of brown and while semisweet choco chips and since I had only Walnuts used only them.

    You could add some coffee extract or have the coffee even stronger. I haven't tried adding more coffee and less buttermilk, but you could try it and see how it works.

    I made it today and it's absolutely delicious!
    I used raisins instead of chocolate chips because I didn't have any, and peanuts. They were very moist and the flavours are wonderful!

    these are really good, tried them yesterday and turned out perfect. i used mascavado sugar instead (because i didnt have light brown) and worked out just fine. very very moist indeed. thanks!

    You can make a good substitute for buttermilk. Stir 1/2 tablespoon of lemon juice or vinegar into 1/2 cup (120 ml) of milk. Let it sit at room temperature for about 10 minutes and it's ready to use.

      This works really well in the regular Oatly oatmilk, too...I have had difficulty with some plant-based milks, but it works with Oatly, just in case anybody needs a dairy-free option.😉

    Baking this at 4:30am! 😄😄 due to small oven size need to bake 2 batches instead of one. Hopefully the second batch is as good as the first as it was sitting out waiting... First batch looks good though. Didn't have wheat flour so I used only AP flour and also reduced sugar. Thank you, Stephanie. Your instructions and explanation are very clear and you also offer useful tips.

    Yes, you could use white sugar. I don't believe I ever said to use sweetened cocoa powder. The recipe says to use unsweetened cocoa powder (either regular unsweetened or Dutch processed).

      Rainbow Rose if you want to change so much ingredients from original recipe, then better make one yourself . There are a lot of works behind a good recipe. The quality, quantity of each ingredient play an important role in the recipe. No one can give you the answers if you want to change to much of it. Maybe you should stick to the original recipes first, try to use the listed ingredients or its substitute as she stated. I learned a lot from Watching many of her videos, read each recipes and stuffs she wrote in it, she gave out so many tips, these are treasures.

      You can use any of those ingredients, just experiment, that’s what I do... You can use any of those ingredients you mentioned, it might not be exactly the same result, but it will probably still be edible!

    Dear stephene I have to bake a chocolate cake which is of 1 egg with same ratio of flour i.e. 1/34 cups of flour have taken risk, as u said can mix both wheat flour and flour. So I have taken 1 cup of flour with 3/4 cup wheat flour.
    2. Now as u said to give body to cake u add 2 eggs with 1/2 cup oil, and buttermilk. My recipe has with 1 egg 1/2 cup curd, oil, & milk can I add strong coffee suggest as soon as possible. Waiting for ur reply. Right now in India it is going to be three a clock. And before 8 o clock I have to bake my cake. Reply me soon thanks Rims1

    I am now confused, which one should i make first, this one or chocolate ricotta muffins?? One year ago when I watched this video, I wasn’t sure because my son and daughter were not too keen on liking coffee but now my son is loving it and daughter also don’t mind so may be this one because if i make this, I don’t even have to wait to buy ricotta cheese.

    Dear Stephane I have six muffins cupcake mould and your mocha muffins batter is for twelve cupcake. If I bake in silicone six muffin tray first after muffins r done then I put rest of batter will it be ok and bake perfectly as baked first in otg. Reply me soon . Thanks rims1

    Hi Stephanie :) I just made those and something didn't go well. At first the muffins were really beautiful and even with a nice even crust, but as they baked more the inside kind of exploded like volcano and then spread on the sides and the muffins (though tasty) turned out really ugly. Where did I go wrong? Should I lower the temperature or rise it? Any advice is helpful :)

    While you don't have to roast the nuts, I usually do, as it really brings out their flavor.

    More muffins, love it, my Daughter loves Mocha anything....she will love these ? BTW....have a question lol ? I make a lot of muffins because I have on for breakfast every morn. with my coffee usually....I let them cool completely before storing them.....I put them win a lock & lock container with a paper towel in the bottom....all my muffins seem to be sticky on top !!! how do I avoid this ??
    When I make choc. muffins, I usually will make a choc. for the top and this is the only way that they don't become sticky.....but I don't want choc. maybe on every muffin !!! Am I doing something wrong, or do you have a solution..... FB me the answer please if you don't mind.....Thanks

      If the muffins or cakes have a high sugar content this can happen. If you store them in the fridge it helps to prevent this from happening.

      You could use the same amount of regular salt. For soft muffins make sure not to over bake.

      Anna Retnam Yes, it could be over mixing or it could be too much flour. If you don't weigh your flour then to measure it, spoon the flour into your measuring cup and then level the top.

      If you're simply halving the recipe (so you get 6 instead of 12 muffins) but still using the regular sized muffin cups as I did in the video, then the baking time and temperature would be the same.

    Dear stephene genereally I bake a cake in 180 degree centigrade. This time I tried muffins in silicone mould and fill batter till 3/4 tap once and put in 190degree centigrade to bake. In this brown sugar was more and white was very less. When I lined with paper liner cleaks were formed. When I tasted coffee was less in taste, sugar was too less and eggy taste was more where toothpick came clean but why eggy taste was there I myself don't knw. This recipe is not urs one more site. Of somebody. Let me knw what went wrong and how to improve it. Thanks rims1

      evilbabygirl92 Brown sugar is a
      refined sugar that varies in color from light to dark brown and
      has a full-bodied flavor and soft moist texture. In the past brown sugar was
      semi-refined white sugar where some of the natural molasses was left in. Now
      brown sugar is made by adding molasses back into refined white sugar. The color
      will depend on the amount of molasses added during processing of the sugar. The
      darker the color the stronger the taste.
