Okay I have a theory.
The part of your brain responsible for memory, decision making, thinking, etc. is on your forehead. I mean not literally but like the front of your head behind your forehead. And Tanjirou's forehead is really hard. It might have protected him from forgetting about Tomioka.
What about Nezuko? Well Nezuko doesn't really remember people as a demon. She basically had a lot less IQ. She remembers mostly her family. And she's friendly to all humans. And very attached to Tanjirou. So you could say she might be a little confused but she will be friendly.
