I learnt to cook Beef Tataki in cooking school as an appetizer for the restaurants dinner menu. Very nice and easy to cook. Our fillet mignon was marinated in a Bonito flake and ponzu sauce mix which was later used to marinate the red onion and Eggplant. It was cooked sliced thinly then served as: Four slices on the plate with pickled red onion and eggplant. Wish I had the ingredients at home to cook whenever I wanted.

"Kiss of the dragon" is the umami imparted to food from a screaming hot skillet or wok. That looked mouth wateringly great. I could almost smell the mignon searing. Have you guys ever had Philippine steak salad? You cut about a pound of very lean beef (mignon, round or any lean cut) into thin (1/8" or less) x 1" strips and put it into a strainer. Then you slowly pour about 2 or 3 quarts boiling water over the meat tossing it in the strainer as you go to ensure it all gets exposed to the water. Let drain and put that into a bowl. Thinly slice up one large onion and separate the rings and put that into the bowl. (You can also substitute 1/2 cup chopped green onion). Squeeze the juice of 2 lemons into the bowl removing the seeds of course. Add 1/4 teaspoon Accent, 1/2 to 1 tsp hot red pepper flakes and a pinch or two of salt. Mix well and let marinade in fridge for 2 hours to overnight. Enjoy!
I just checked the menu prices, and I'm surprised at how CHEAP everything is! I expected it to be super expensive, but everything is beyond reasonably priced.. It's literally a steal! I just wish I lived in FL so I could go... >_

Hiro, this is just an advice, but I recommend letting the steak rest for 10 minutes before cutting them. As one surface of the meat hits the hot pan, the juices on that surface are forced away towards the center, increasing the concentration of moisture in the middle of the steak. Once the steak gets flipped over, the same thing happens on the other side. The center of the steak becomes supersaturated with liquid-there's more liquid in there than it can hold onto-so when you slice it open, all that extra liquid pours out. By resting the steaks, you allow all that liquid that was forced out of the edges and into the center time to migrate back out to the edges.

Traditional ponzu sauce actually requires a Japanese Citrus called Yuzu. It looks similar to a lemon, but the flavors are very different.
If I ever go to miami I will definitely eat at NoVe :)
