  • What do you do with left over Lechon? Some fry it again and others turn it into Paksiw. And that's what I will share with you this Sunday - My version of Lechon Paksiw
    The ingredients are:
    Leftover Lechon
    Liver Sauce or Sarsa
    Banana Blossoms
    Star Anise
    Soy Sauce
    Vinegar
    Whole peppercorn
    Salt
    Dried Bayleaves
    Water
    Garlic

    Iba Yun lechon paksiw Dito sa Cebu at Mindanao walang Mang Thomas literal tlaga na paksiw may suka at Toyo at paminta.

      Masarap na Sinigang sa bayabas lagyan ng puso ng saging at talbos ng kamote o kaya Sinigang sa Sampalok lagyan ng gabi kangkong at labanos.

    My God, that’s better than restaurant quality. One thing I love about your channel, I always find something new to add to the dish. I have an aversion to star anise except for sweet dishes. This version looks super delicious. More garlic, banana blossoms & star anise. Even adding water more water which I’ve never done before but now it makes sense. Thanks Goma. You’ve got a really bold & sophisticated palette, you understand how ingredients work together. My kitchen envy is still alive every time I watch your show. 🙌🏽🇦🇺😍

    Do you know that only Filiponos use the word “Viand”.
    Its an archaic word meaning food item normally eaten with rice.
    I cant define or search how this word becomes a favorite word for Filipinos. Normally, the word “ dish” is the colloquial term use to describe a food item.

    Whenever mom visits me she likes to make for herself paksiw but she makes it with fish, or salmon. I will try to make this for her, your version, it looks and sounds delish! My mom is from Bohol , and my late dad was from Leyte. I remember my parents like to make paksiw occasionally. This version sounds realy great! I will have to look for liver sauce in the filipino grocery here in Seattle (Seafood City).

    Ayaw ko Ng masabaw na lechong paksiw. Gusto ko Yung parang medyo naiiga Ang sabaw.. at ayaw ko din Ng masyadong maasim.. unless lagyan mo Ng sugar, para mag balance sa Asim. Pero matamis na Ang Mang Tomas (liver sauce) kaya no need na Ng too much sugar. In My opinion. (Loley)

    sa amin sa bisaya DNA KAILANGAN yang mang tomas.. suka lang ang sa amin kasi TIMPLADO na ang lechon. you just boil it at lalabas na yung timpla nya tas pag medyo kulang sa alat at black pepper then dag dag lang.. pero sympre susubukan ko parin ang version ni Richard para maiba naman.. salamat 👍👍👍

    Sir Richard, try to put little sugar with your paksiw na Lechon. I grow up in Biñan City, Laguna. I remember my Mom adding little sugar when cooking paksiw na Lechon. And to thicken the sauce she also adds breadcrumbs.

    Pareng Gomz, nakasanayan ko ginigisa muna ang Bawang at Sibuyas, try mo din yun. Maiba lang sa nakasanayan mong luto sa Lechong Paksiw. Gayunpaman, sigurado akong masarap ang luto mo niyan. Yung iba may ilang stalks or crushed stem of lemongrass pa nga.😊

    Puede ba maging crispy yun balat through frying in few oils in high heat. We cooked lechon leftovers in garlic and black pepper. Super sarap too.

    Sir we don't stir if you put vinegar and not yet boiling. That's the only time you stir para luto an Suka at di hilaw ang amoy ng suka. Mas Masarap🤗☺

    Sorry po Mayor Gomez, lechon paksiw ang hindi ko gaanong type na ulam kahit nong nandyan pa kami sa Pinas. Kumakain ako ng lechon pero hindi rin ako mahilig sa sarsa. Meron kaming binibilhan ng lechon dito sa Seattle na masarap ang timpla hindi na kailangan ang sarsa. Kahit naka fridge the whole day crunchy pa rin ang balat.

    Wala nimo soak ang banana leaves? Ingon sa Chef soak it first for about 7mins or else it would be bitter in taste. Ikaw diretso butang sa Calderon hehe 😁
