at the very start of the level (0:21) turns out you can actually just climb to the right around the big ice wall and then up onto the ski lift area to skip 90% of the level

I've seen this done over and over and I've tried alot but on xbox if I stuck on a wall I can't swing left and right with one hand as soon as I raise my other hand the camera drops and so does my hand

Instead of getting the crate to put on the button, you can just bring the rock with you that you break the ice with.

2:54 I have found another way to get across is by using the board to cross the gap and jumping on the board when it’s crossing the gap.

You mean with the chain, ice cube and wood planks ? I didn't even use the 4 wood, I just jumped to get under the small roof and then jumped accross (I used the wall a bit) to the side to the cave.
