Its not KI and it can not know that. It is an OCR extraction with rules. Like most other software like this too. KI just sound nice, but no one has a real KI in the technical term.
For knowing how to book things you need a real KI or it has to be rule based.

Yes, but you can use it on Odoo Online for free as ODoo Online is free for one app. (including support & hosting)
