At 31:26 the triangulation would reveal the curvature of the earth, you would not have to 'allow' for it or consider it in a triangulation survey. If I surveyed a dome shaped hill by straight line triangulation you would end up with a dome shaped survey albeit made up of straight line triangles.

In geodetic triangulation the sum of the three angles of a triangle is 180 degrees plus “spherical excess”, a factor that is a function of the physical size of the triangle and the parameters of the reference geodetic sphere. In the field geodetic surveyors do make this calculation to check the quality of their angle observations and repeat the observations if necessary to meet the specifications of the survey.
