Nothing like Chamorro potato salad! Havent found anything close to it. Short ribs are likely marinated in soy, vinegar etc.. red rice made with bacon fat instead of butter is the best. Can eat it by itself.
I'm a Chamoru from Guam! :) The coloring of the rice comes from achuette - the rice, among some other of our local staples were introduced by colonization. The rice in particular was through the Spanish colonial era, but from the Mexican laborers who worked for the missionaries. The rice is usually cooked with achuette water for color, some salt, garlic, and onions for flavor; but if you're fancy - bacon and green peas are added too. The sauce is fina'denne' (it means, to be made of or like hot chili peppers) and we have a few different types with the same concept - soy sauce, lemon, vinegar, and tuba vinegar (made from fermented coconut sap).
The chicken salad is called, "kelaguen" (kelly-gwen). It can be made with chicken, beef, deer, fish, shrimp, octopus, and some clams. The concept is that lemon juice cooks raw meats (not the chicken though - this has to be cooked to a safe temperature) and hot chili peppers and other flavorings are added - almost like ceviche.

Need to come to this side more often, I usually eat at Adela’s across the street 🤤. When you’re on the north side I think a review of Kahuku farms would be awesome. Especially the farm pizza, grilled banana bread with Haupia ice cream and smoothies. Something super fresh, delish and family run farm to table business 😊. Beautiful views too.
Ooooo hope they have one while I'm back in Hawai'i. Be back in one week! Also was talking to someone saying I need a Hawai'i ambient sounds sampling and they were like "oh ocean sounds?" And I go "no chicken sounds". You hear the chickens you know it's real local, I love it. ☺️🤙

My wife is a vendor at mainland Asian craft fairs and with the pandemic they were all canceled last year. If you’re ever in California please look her up. I provide the hard labor. She’s the talent! She sells Japanese Kokeshi dolls with ceramic bodies and gourd heads. She also sells Asian jewelry.

The bracelets you got are really cool and she really knows how to market. Beautiful presentation and quality! Felix yours really looks good on you and masculine looking(most important). Omega on one hand ,black onyx on the other is badass. I'm a dude and the only jewelry I like is Omega and occasional heirloom Jade necklace. Lastly,I happened to love how long this video was. Fiesta plate, yum. Yeah, potato salad is american style on Guam, but its less common in fiesta plates from food trucks because... food poisoning is not cool. It's more common to either have a pickled salad (usually cucumber daigo kimchi, pickled cucumber in soy sauce, or standard cole slaw) or Pancit bihon in place of the potato salad.

Nope. That's not authentic chamorro style. That's modifications from lack of real achiote or taste preference. I'm a purist, so I prefer making red rice fron actual achiote seeds. Their red rice is made from Sazon Goya (achiote with cilantro) The "larb" is kelaguen Sauce should be finadene'. Most families have different styles and taste, and there are more people using Sazon Goya for their rice, but og is to use achiote seeds. The potato salad is too plain.

Yes kelaguen but also Finadene sauce I think! Amanda they use achiote seed and I think bacon for the color and slightly smoky flavor of the red rice! So good!

Nope. That's not authentic chamorro style. That's modifications from lack of real achiote or taste preference. I'm a purist, so I prefer making red rice fron actual achiote seeds. Their red rice is made from Sazon Goya (achiote with cilantro)
The "larb" is kelaguen
Sauce should be finadene'. Most families have different styles and taste, and there are more people using Sazon Goya for their rice, but og is to use achiote seeds. The potato salad is too plain.
