  • Swedish almond cake - Today I bake a delicious Swedish almond cake, like you've probably seen it at Ikea, it's called Almondy. The recipe is without flour and therefore the cake is gluten-free. This simple almond cake is super easy to make and just tastes amazing! And of course much better than the original bought in the freezer. So get a piece of Sweden home quickly! 🌼

    Ingredients for the almond cake recipe:
    Dough:
    4 egg whites
    140 g almonds
    80 g of sugar
    pinch of salt
    Filling:
    4 egg yolks
    70 grams of sugar
    4 g vanilla sugar
    100 ml of cream
    125 g butter
    50 g flaked almonds for sprinkling
    Baking: 20 - 25 min 180 C
    Baking pan: 20 cm

      No. The vanilla, cream & butter takes care of that.
      If in doubt, make it with *half or even quarter* the amounts of the ingredients. Don't forget to adjust the size of the baking-tin too.

    I have made this cake more than once, and it is absolutely divine. I would highly recommend adding 1/4 tsp almond extract to the buttercream frosting. Also, keep in mind this makes a very small cake. I used two 7-inch round layer cake pans lined with parchment paper, as I didn’t have two small springform pans. It worked out perfectly.

    Loved it! I was a little worried that I would ruin the cream because I'm just a beginner in cake making and I hate working with butter creams because I tend to over cream it. But this one came out perfectly ! Thanks for the great recipe!

    Made it. Recipe was easy and quick. Tastes very similar to the one from ikea in case anyone was wondering. I used milk chocolate to coat but recommend doing 60% milk and 40% dark since it’s a tad too sweet or do a thin layer of the cream. I would make it again, overall you’ll feel like you’re eating daim! 10/10

    In Sweden this is called a Zuleika cake (zuleikatårta), and the recipe is older than IKEA. We sometimes add lemon zest to the filling - or Swedish punsch.

      Interesting. Zuleika is a Muslim name, also used in Africa but spelled Suleika. Makes one wonder where the recipe came from originally.

      Zuleika is the name of the woman who wanted to flirt with prophet Joseph (peace be upon him) in Quran but he never let her came towards him as she was already married to a king.
      She was quite beautiful so the cake is🤣❤️❤️❤️❤️

    I made this yesterday, a lovely cake. However mine seemed much thinner than yours looked even though I know it is a thin cake from eating the Almondy version. Followed the recipe exactly but never mind. To compensate I halved the recipe and made another layer. Still have leftovers so looking forward to the rest.

    I would use cream cheese in place of the butter at the end, or some homemade icing mixed with the egg yolk mixture then topped with the almonds. Abit better than using so much butter. I will try this recipe at home, it looks gorgeous. Maybe abit healthier compared to a traditional cake?

    This looks great. I used to do an alternative where minced nuts are soaked in some hot milk and add some (~1/3) of the cream into, then spread it over the egg cream.

    Я сделала это! Приготовила этот чудо- торт, получилось пре-вос-ход-но! Немного изменила декор, не было миндальных лепестков, посыпала охлаждённый торт крупно порубленным, обжаренным миндалем, сверху залила глазурью- 2 шоколадки + кусочек сл масла. Вся семья оценила, только нужно делать 2 нормы как минимум, быстро кончился

    May I suggest to add a tablespoon of cognac/brandy to the cream, it will make it so much tastier! Also, let the cake cool in the fridge at least for 1-2 hrs, before cutting it, so the cream could firm a bit.

    This is very similar to a cake called Sans Rival in the Philippines. The only difference is we use ground cashew nuts instead of almonds. Pretty sure your cake is delicious.

    Можно тоже сливочное масло со сгущёнкой взбить. Тоже хороший крем получается. Можно тоже измельчить грецкие орехи и обсыпать.

      We had something similar for Passover, a Budapest torte, which is the same idea for cake but you use hazelnuts instead of almonds, and instead of buttercream frosting, you use whipped cream and raspberries. You gotta love meringue cakes!!

    Спасибо, попробую)) но текстура и вкус крема в икеа не похожа на простой заварной крем. Я думаю, ещё белого шоколада добавлю))

    Hmmm....interesting, this cake is similar to a Sans Rival in the Philippines and a dacquoise in France.

      Hmmmm, ahhh yes! The super delicious French Dacquoise, as almost all French sweets/desserts are. It's a funny thing, but the French, ever since Medieval times, have always been the gastronomique leaders, in fine cuisine & dining. They were @ the gastronomic heart, of leading & best European food. To this day, this reputation hasn't changed, even though nowadays, great fare, can also be found across Europe.
