    Here is the recipe:
    ingredients
    2 large parsnips--peeled, skinny ends discarded and fat ends halved lengthwise
    2 sweet potatoes, peeled and halved crosswise
    1 celery root, peeled and halved crosswise
    2 purple or golden beets, peeled and halved
    Fine sea salt
    Olive oil cooking spray
    directions
    Using a mandoline or handheld slicer, slice the vegetables 1/16 inch thick.
    Place the vegetable slices on paper towels in a single layer; sprinkle with sea salt. Let stand for 15 minutes, then blot dry. Position racks in the upper and lower thirds of the oven and preheat to 375 degrees . Lightly coat 2 baking sheets with cooking spray.
    Working in batches, place vegetable slices in a single layer on the baking sheets. Bake until crisp, about 20 minutes; sprinkle with sea salt. Let cool on the baking sheets for 5 minutes. Transfer to a bowl. Wipe the baking sheets clean. Repeat with more cooking spray and the remaining vegetable slices.

      re-looking up word's Etymology, or 1st/original meaning. Ever since America was colonized, they teach us 2nd meaning of words aka connotative meaning aka "slang". For instance "nice healthy snack" lol. Check it,
      nice (adj.)
      late 13c., "foolish, stupid, senseless," from Old French nice (12c.) "careless, clumsy; weak; poor, needy; simple, stupid, silly, foolish," from Latin nescius "ignorant, unaware," literally "not-knowing," from ne- "not" (from PIE root *ne- "not") + stem of scire "to know" (see science).
      2nd meaning is what we think to be true but is not, which is Dogma = something we accept to be true. Cuz we all think "nice" means "pleasant"....well let's just say "pleasant" instead! lol... there's a saying "to change a people, you change their literature"...seems like it's working on the majority of us. Let's get woke! ^.^

    this is awesome, but the only thing I would recommend is if you are doing several veggies(roots) do them in different batches, yeah you will have to wait longer to eat them, but you will not run the risk of burning some and some being under cooked.

      Use multiple pans at once, reduce the wait time

    Oh, num this looks so good. I think I would bake each veggie type on separate pans since the bake time is a bit different. Maybe that way the parsnips and jicama would get a little browner & crisper. Thanks, Jack!

    they will be even better my second try. My wife loved them. I also will cook all of them separate according to vegetable.

    Thats a great idea, I should try doing it in the oven. I always do it in my dehydrator for 8 hours and I've included a video on my channel if you want to check it out. I read in a dehydrating book once that the temperature should not go above 45 degrees or else the food starts losing its nutritional value. A week ago, I made beetroot chips, zucchini strips and carrot chips, they were all super crispy and I used a speacial blend that increased their nutritional value.

    yes they will get crisper. next time I will cook them according to vegetable so that some can cook longer.

    Hey Jack. A tip for using the mandolin is putting a kitchen towel on top of the vegetable you're cutting so that you don't end up sliding your hand!

    you can do the microwave version. turn them every 2 minutes, 'till they are crispy. enjoy. ( i let them soak in water + vinegar for 10 minutes, then dry them out - before microwaving )

    yes. I totally agree. the beets got over cooked cause of the extra sugars in them.

    This was a great idea. I made some sweet potato chips and ate them with a bowl of homemade butternut squash soup. Excellent alternative to store bought crackers or chips, and you actually know what are in these. I enjoyed this simple recipe idea, thanks Jack, you're a sweetheart. :)

      spaceyzimmy there are three ingredients in lays original chips lol. I would prefer these because lower calories less salt and more nutrients. Potato chips are high in vitamin c. Don’t be afraid of potatoes. Just eat healthier varieties like purples or yellows. Eat the whole potato even if it’s white it’s healthy. Beet chips sound great. I like the sweet potato chips too.

    I make these a lot but I put them on a wooden stick and put that over a bowl, then I put in the microwave for 5 mins - sometimes they need longer

    Had leftover beets? If so use em in Beetroot soup! It's great cold in the summer and fab when it's hot in the winter.

    not really. The jicama was soft but the rest were crunchy just like chips. I liked to beets and the sweet potatoes the best.

    Sweet Potatoes - when skinned are Yellow -to light orange.
    Yams are a rich orange color on the inside - brown skin, like you guys (ya'll) want on Holidays.

    ...and NO, lol - it doesn't have ground beef and onions in it - ha!

    what is the difference of the result if you bake at low temperature for hours than high temperature for minutes?

    Made this for approx. 3 hrs (incld washing the dishes, bake in bathces, etc,etc).. Eat 'em im less than a minute. Thank you for the receipe, but i would rather buy them in store. Lol. Just kidding:) i would try them out next time when i have nothing to do

      +Summer Heartss I dehydrated Sweet potatoes & several other roots that I can't remember & most of them turned out pretty good. There was one I didn't care for but since it was last year I don't remember what it was.. Think it was the jimica root. I used blackening seasoning on mine to give them a nice kick. Other people liked them better than I did, but I did several batches with decent results.
