Another very simple inexpensive salad that everyone goes nuts for is a cucumber onion salad. 2 cucumbers ,half of an onion, cider vinegar ,sugar salt pepper and maybe a little bit of celery seed if you have it. Every time I bring this to a party it’s demolished. Cut the cucumbers thin.
The Mediterranean bowl looks like a great meal for summer! I always forget about bowls. They are perfect because people can add what they like and leave out what they don’t.

I like your strawberry cake recipe! If you have leftover strawberries and some muscavado sugar laying around, try strawberry milk. I slice up the strawberries in pieces, mix the muscavado sugar with it, and let it sit in the fridge. Then, just add half strawberry and the rest with milk.

If you added some kalamata olives, some red onion, oregano and feta cheese to the tomatoes and cucumber and used olive oil and red wine vinegar or balsamic vinegar u would have traditional Greek salad. Great recipes!
I have a Greek Son inlaw and many Greek friends so yes absolutely right no romaine lettuce in traditional Greek salad and actually u should use goat cheese instead of feta if u want to keep it truly authentic.

Hey mindy..instead of using the sour cream in your corn bread.. try using an extra egg.. it makes the corn bread more moist...please try it... I always make my corn bread with the extra egg...it turns out like a cake texture..and it isn't dry and crumbly like it mostly does ...even in a scratch corn bread recipe...use 2 eggs and the 1/3 cup of milk...it does improve the corn breads texture

Suggestion - if you're removing the onion in the green chile chicken soup because someone in the family doesn't like chunks of onions - consider blending the onion with some broth and then putting it back into the soup to thicken it. Don't waste that onion! LOL I would just chop the onion and eat it in the soup.

So i got meal kits when they were $1.39-$1.50 a serving and i just froze the meats, produce, and added spices to my cabinet. $50 for 6 meals for 4 people. I just cancel then renew when price drops
I'm all for dessert, but if you are in a tough time and need to cook, you might have to lose it. I would probably ditch the dessert, buy spices, and know that I have them to spice up many future weeks. That being said, LOVE that cake!!! I do a very similar things but instead of rice I put potatoes cut into bite sized pieces. I mostly season with thyme (i personally like it a lot) and then before covering it for the potatoes to cook I also add heavy cream. I'm not a big believer in sugar loading my kids. However, I completely agree with you about having a dessert they like occasionally. Satisfying the sugar craving at home is a lot cheaper than going out for ice cream when we're driving past.

Wish that you didn’t have to use so many products that created so much waste. In other words maybe you could recycle more and get things in bulk. Also do you compost if not you should start. Don’t throw away produce or jarred nut butters in trash. Ugh
