Vegan Tofu Katsu Curry - 曰式炸豆腐咖喱

  • Crispy tofu katsu with flavorful Japanese curry served on a bed of rice is what you need to try today! The tofu is perfectly seasoned and fried to a golden brown. The crunchiness is so addictive that it can be served as-is. The curry has melt-in-your-mouth potatoes that go so well with a bowl of warm sushi rice. Thanks for watching!

    Ingredients
    Tofu Katsu
    - 16 oz firm tofu drained and freeze
    - salt and pepper to taste
    - ¼ cup flour
    - ¼ cup plant-based egg or plant milk or aquafaba
    - ½ cup panko breadcrumbs
    - salt and pepper
    - oil for cooking
    Japanese Curry
    - 2 small-sized potato about 1 lb, peeled
    - 2 medium-sized carrot chopped
    - 8 oz King Oyster mushrooms chopped
    - 4 cups veggie stock
    - 1 large onion finely chopped (yields about 1¼ cups)
    - 1 small Fuji apple peeled and seeded
    - salt to taste
    - ½ tablespoon peach preserves optional (see notes)
    - plant-based butter for cooking
    - oil for cooking

    - Cooked sushi rice
    - finely julienned cabbage

    made this tonight and it was delicious! I had some Kohlrabi left over so I used that, which was a good addition. I agree with the person who said using the sieve was a good technique, I will definitely adopt this in other recipes, too!

      Hello Ling, thanks so much. I'm so happy to hear that you loved the recipe. I used Just Eggs. If you can't get it, you can always use chickpea water (aquafaba) or thick unsweetened plant milk like oat or cashew. Please let me know if you need anything else. :)

      It's firm tofu and you'll get tau kwa from Malaysia (those soak in water with a thicker outer layer from the market). :-) Yes, I did freeze mine on this recipe.

      I would make an egg like batter with besan (chick pea) flour.

      There are so many recipes online that you can try. Just google chickpea omelette or vegan omelette. :-)

      Hi Handy, sorry for the late. I normally use a variety of vegetables to make the stock. If you are in time crunch, you can try adding Yondu to water or get store bought veggie stock. Thanks a lot!

    There are so many ways and reasons, to avoid a plant-based egg. Give Mom a break. There are easier ways.
