It's nice to see you haven't forgotten about the show. Alchemy is powerful and we know that Ed knows what the human body is made of because he ticked off the ingredients in an earlier episode. He also likely knows dozens of ways to decompose one instantaneously and how grotesque his life would quickly become if he ever gave up his conviction against killing human beings, let alone his conviction against using alchemy to kill human beings. For comparison see Major Armstrong. For contrast see Mustang and Kimblee.
The character of a soul can only be judged when doing the right thing will cost you dearly. Everybody can be good and kind and have ideals when things are easy. But it takes someone like Ed to pay the price for not giving up on your ideals.
Two fun facts: 1) The author, Hiromu Arakawa, at the time had given birth to her second child, so she wanted to give Ed a sense of the pain during childbirth, with that scene where Henkel removes that piece of iron from Edward's abdomen. 2) The episode 42 is the only one that Ed didn't appears.
