According to a Interview with Barth (the showman) they have different wheels available to install on the train. So I guess they use a softer wheel compound on the larger, heavier 7 car trains to slow them down a bit. Thats why they are almost identical.
Makes sense that they have different types of wheels available, but I don't think they just change them when they add the extra cars on, as that would be a LOT of work 😆 When it first came to Winter Wonderland, it opened with the 5 car trains and then the next day it had 7 car trains! I think they look close in this video because the heavier train was riding in winter, and the lighter train was in the hot summer, plus it wasn't even a full train. The only way to do a real accurate comparison would be if it was running with both size trains at the same event!
Because the shorter train is.... shorter, it can release from the second lift hill before the longer train, even though that's slightly ahead! Also, the colder temperatures probably help it to be quite even! The only way to do a 100% accurate comparison would be for both size trains to be on at the same event!

But you can see it's faster with the 7 carriage trains! It hits he brakes a good few seconds before the shorter train does!
