- Simco's has been serving up hot dogs to the Boston neighborhood of Mattapan since the 1930s! Their signature dog is served with a Greek-style hot dog sauce, onions, and mustard. Hope you enjoy my take on this iconic hot dog. wildfireoutdoorliving.com/gri...

I feel like I’ve been watching ballistic bbq for the last decade. Your ability to keep making amazing food content is remarkable
I’ve been cooking chilli in the UK for 40 years, never even thought of that cold water method. It’s a game changer! 🤯
I only did this because I saw a video of the Simco's people doing it. It was easy, and worked!
It’s a pretty common technique for hot dog chili, gives it a different texture. Cheers.
I first saw it done in a fast food place in Sunderland around 91. Hassan’s was the name of the place and he prepared pizzas, burgers, fried chicken, baked potatoes and loads more. I used to get his chillie on a baked potato and one day saw how he made it. I was amazed, but it tasted great:)
Wish i could like this video twice. Those dogs look delicious!
Thank you! Appreciate the comment!
Thank you very much for providing such an amount of great recipies!
Been going to simcos for years never fails!! 🌭🍔🍕💪🏾💯#MURDAPAN #617 #BOSTONSTRONG
Thanks for stopping by the channel!
Exactly, Clarkwood st. Here!!! I'm so glad they are not shutting down
Love an over done roll. Nice job.
Great lookin dog Greg. Love the bun substitute! I’m going to have to try that chili. Thanks again Greg!
great idea for a New England Roll!!!!nI had never thought of that after living in Jersy for 26 years
Love the bun hack!!👍👍
That's the only way I make hot dog sauce . Been doing it that way for a few years . Really makes the best hot dog sauce texture .The bolillo roll idea is awesome ! Plenty of those style rolls here in Texas. I'll be using that one.
I'm from Massachusetts. When I saw you take out them bollio bread I was mortified. But you killed it with the split top rolls! I'm in NC now and I take for granted the split top rolls. You simply cannot get them on the regular outside of New England! Great cook man. You killed it!
Thank you for the comment! Got to work with what we have available!
@@BallisticBBQ I completely agree. You made the best of it!
love it brother
I never thought of that with the Roll! What a GREAT IDEA!! I'm originally from Rhode Island and now here in San Diego and I ALWAYS have a hard time finding a good Hotdog Roll. Definitely going to do that in the future!! I've been to Symco's MANY MANY times and those looked SPOT ON!
The rolls work! I’m going to do these from now on for the family.
Nice work Buddy!
You should try making Albuquerque, NM's Dog House chile dogs. I've seen grown men with tears running down their face from the spicy red chile.
Another local favorite is from a place called, Bob's Burgers. Their green chile dogs are my favorite.
Neither place sells $10 dogs, and you can afford to take the family to them and still be able to go to a movie afterwards.
I have a bunch of Hatch chilis vacuum sealed in the freezer. I'll have to check both those places out. Thanks!
@@BallisticBBQ Dog House was in "Breaking Bad". I don't know if Bob's Burgers ever was, since I'm probably one of the only people in the region who never watched that series.
@@latigomorganwe always leave the TV on for our Boxer when we leave. We always put it on Bob's burgers. If we have it playing when we're home she'll sit in front of the TV and watch it.
They look delicious and I’m watching this to late at night, hungry now.
Thank you for checking it out!
That chili recipe sounds fantastic! Excellent dog👍😊
It was! Thanks for watching, Bobbi!
Very good video. Love those Boars Head hot dogs.! Well done my man.!
those look gooood. will be making these
Enjoy! Thanks for stopping by!
Love your videos. Especially liked in this one the "Yeah, I burned this, it's on me." And you didn't refilm. Hot dogs do look great, and the starting cold thing makes a great hot dog sauce/chili, coney style.
Absolutely delicious lookin dogs. Another great video Greg. I myself love the darker or as some would say "burnt" buns. Have a great week brother.
Thank you, Ron! I used to hit this bagel shop in the mornings before work. One of the regular customers ordered his bagel burnt, black as coal. It was funny, he would walk out with his bagel and the shop would be filled with smoke!
You know Greg, ALL of us have over-toasted more than once. Not a game changer..👍 I look forward to another episode, Sir..!!
Outstanding looking dogs! Being a Connecticut boy, I approve!
Appreciate that, David!
Im all over this! Looks, and sounds amazing! I would only change 2 things; No American cheese, instead, finish with a mound of finely shredded cheddar and even though boars head dogs are quite respectable, I'd def go with Koegels brand Veenas with natural casings. As far as the sauce goes, it really reminds me of the sauce that you get at Connecticut's own, Capitol Lunch! The Martin Rossol dog that you get there SUcks, but damn, they have Awesome awesome AWESOME sauce! Take the koegel dog and marry it with this sauce and you are in heaven!
I must make chili that way, sounds amazing!
It's so good! Cheers, Don!
That looks like a great dog!
Thank you!
are you ever going to make a Ripper? a deep fried natural casing beef hot dog.
Rutt's Hut is very much on my list. I did a copycat of Hiram's Roadstand dogs a while back. They're deep fried as well, just not as intensely as a Ripper!
Rippers and drippers!!!!!
I’m really glad to see someone doing something positive with beans in their chili. In Texas, No Beans means No Chili…!
Edit: Next time try prepping the buns with PepperJack Cheese… I’ve been doing that for over 50 years now.
Good "hack" on the buns/rolls, Greg!
The buns were fine, nice cook!
Sounds like a cousin to Cincinnati chili. Same Greek origin. Same style of preparation. Spice profile is very similar. The most notable differences being the absence of cinnamon and presence of beans.
Shred the cheese and put it on top and you've got a Cincinnati cheese coney "with everything" with the onion and mustard. Pour it over spaghetti, shred the cheese over the top, and you've got what we would call a Four Way (chill, spaghetti and cheese being a three way with either beans or onions making it a four way; five way with both).
It's neat to see how base recipes evolve and come to be embraced within their communities!
I've been a subscriber for a long time, but I think this is the first video I've commented on. I've borrowed a lot of of ideas over the years. From this one I think I'll try mixing in a can of beans in a batch and try it with split and toasted rolls. Sounds like my family might like it! Thanks for all the great videos over the years, Greg!
Thanks for the info. I'm going to check out some Cincinnati dogs.
That's my state!!!!! nice
Thank you for watching!
Simple and Delicious, and the bun can make or break a dog for me.
100% on the bun!
Very fancy butter rollers applier. I have seen some restaurants use that, but never at home.
Another Awesome video, thank you. Have you ever made fry bread? "Askin' for a friend." ;)
I’m definitely going to try that water Chili Recipe ✅. Looks Amazing & perfect chili for Hot Dogs & Burgers . My trick with The Beans is to lightly smash them up I. The chili, adds volume & great taste But you actually do t know you have beans I. It 😂😂. My secret 🤫 😂. Cheers 🥂 Greg. Thank You So Much Aloha Brother 🌸🙏✅
Cheers, Brother-Mike! Thanks for watching!
Hello , those dogs looked really good and that was really creative how you transformed the buns ! Let me ask you a question , what is your go to cooking oil ?
My family has been going to Simco’s on the Bridge for decades. The foot long hotdog is beef. And when you bit into it it snapped.
I’m a hot dog vendor and have done extensive research on hot dog chili. Poaching ground beef is a fairly common technique. It gives it a unique texture and holds much better in the steam pans.
Makes total sense! Thank you for the information!
The most iconic chili dog in western Mass is Teo’s in Pittsfield, no beans in their sauce but rumor has it they chop up hot dogs for their sauce, they only serve mini hot dogs and it’s very easy to eat 10 or 12 in one sitting
I’ll check em’ out!
@@BallisticBBQ Their sauce is kind of fine it’s not runny at all, I think I can taste turmeric, paprika and maybe some curry. A hotdog with everything has chili sauce chopped onions and mustard, their buns are steamed and they use Whorles mini hotdogs, which at one time were made locally here. Like I said before it’s very easy to order 10 or 12 of these and eat every one of them, that is the norm for around here
As we say in Massachusetts "Gimme three up light onions".
👍👍👍
Awesome recipe Greg, Looks Beautifully Delicious. Can't wait to try it.
Thanks so much, Brian!
Yo I see you and I approve -this is one of Boston’s finest -straight out Murdapan
lol! Cheers, Don!
Omg never thought oh that method thanks I got to try that , Greg your awesome
Thank you for watching, Tyler!
Your chili recipe is pretty much the Skyline Chili recipe. It's certainly Greek!
God bless the Greeks!
Can you do a banjo barbecue dog, macaroni and cheese all beef hotdog brisket chunks, barbecue barbecue sauce?
The best hot dogs in the Boston area are no longer. It was a shop(a small chain at one point) on Revere Beach called Joe & Nemo's.
New England hot dog bun, buttered and toasted.
Pearl all beef natural casing dog, steamed over Budweiser and apple juice.
Yellow mustard, diced onion, and relish.
It was called the all around.
Good show here. Thanks for sharing. I thought it kind of strange watching you do what you did with the hamburger meat. I almost walked away, glad I didn't.
It is weird. I only did it because I saw a video of them making the sauce. It worked though.
Greg, cheese steak series PLEASE!
The dude is the best cook in youtube but he cannot toast shit its hilarious 😂
Secret to Detroit Coney chili
Those look smashing good Greg!!! GR8 cook and vid!!! ~Chris
Thanks for watching Chris!
Amazing looking chili dogs. Cheers, Greg! 👍🏻👍🏻✌️
Thank you, Dwayne!
Hi Greg, it's Mike Florence and I trust you and your good lady are well. WOW !!! What an amazing Chili sauce. Thanks very much for yet another iconic Ol' Timey Hot Dog recipe. And yes, the way you toasted the rolls is a winner I been using for Lobster Rolls and Shrimp Po'Boys. So, why not Hot Dogs. Cheers Greg, Mike.
Hi Greg, it’s Mike Firenze, so you know I’m realer than that Florence guy.
Thanks for stopping by Brother-Mike!
@@AlistairGale Hi Alistair Gale, it's that Florence Guy you just commented rudely. You say you are realer than me ??? ALORA, SONO MICHELE FIRENZE, CAPISCI EH ??? BASTA, BASTA, CIAO. Mike Florence.
@@mikeflorence8655 and a happy Molto Bene to you too
🙂👍🥂
And Cajun Seasonings...
is that a new flat top grill?
I don't like a chili cooked in water and looking like diarrhea (sorry for the comparison here). Also, if the chili is thicker, it holds up better. Apart from that consistency issue, I really like this recipe. I had some chili dogs in my life, and they really bring a hot dog to a whole new level. Sounds weird at first, but it's insanely good.
that looked so crazy good...Greg how's your off roading setup these days? Those desert camping vids you made a while ago were rad...keep up the amazing work my dude
Had some stuff get in the way of hitting the desert. Hope to do some mountain trips this year though.
For me, one topping is messing. Sliced jalapeños would go great on that chili dog!
Indeed you would be better off using Pabst Blue Ribbon Beer and Skipping the Water...
Well done Greg, I love a good dog with chili and cheese and that one looks great. Much better than the brisket I just pulled off the smoker. Never had a brisket finish in 8 hours at 250, but this one hit 210. Havn't tried it yet it is resting, but like you with the buns, I am a bit upset with myself. Makes me want to say, damn it.
Lemme know how it turns out. Cheers!
You should do Australian damper in ya coal barbie!
Sup Greg, of course simco's, been going since the 80's, been 5+ years now, I should've thought of it when other reviews. New England buttered hot dog roll, the chili is unique compared to what get in RI, just awesome! You did great bro, shocked can't get the rolls out there but great idea you had. The dog is great too, can buy local, again great job brother👍, tyvm tc
Other than wienorama in RI, seems farther from Providence the more clove added, seems like different parts Greece? Idk. All good tho.
By far ... the biggest problem I have with hot dogs is ... the bun. Once I start to open the bun ... they crack in half ... and the best I can manage is an open faced hot dog ... which is a travesty. Any pointers?
This split top that I did actually held on, without breaking open. I have issues with regular store bought buns as well. If you can find a bakery, fresh is best and if you slice it yourself, if won't split open and break off as easily.
Great job Greg ‼️ I promise I'll try to replicate it but... there's too much water in that chili for my taste, I'll replace it with some great Italian red wine 😅😅🍷🤷🏻♂️🇮🇹 you should try 😉
Hey Greg - Ground beef in water? - I never would have thought of that. - Texans would not like the beans - Here in Canada, they are a mandatory (lol) - it turned out perfect I LOVE all chili dogs!
No worries about the "dark" buns. The only thing I would have added as a topping is some sauerkraut, but that's just me. - Cheers!
Sauerkraut would be amazing! Cheers, Garry!

Sounds like Cincinnati chili which doesn’t have beans.
Yes, this recipe would work great without the beans. Thanks for watching!
After seeing your recipe, I feel like eating food. Don't forget to put on the khal!
=======================
I think that this could be really good. If it had a good chilli, not bland chilli flavored water...
Did you taste it? Doing the recipe the way I saw them doing it.
Beans in chili is regional, no correct answer.
No disgusting onions please. Yucky
