To activate the mangekyo sharingan, you have to have a emotional event to happen for the user. Seeing Boruto getting jump from the entire village was an emotional traumatic event for Sarada causing her to activate the mangekyo. Remember in Shippuden when Sasuke found out the truth about Itachi.

Not so different from how Sasuke awoke his through the love of his brother but also the darkness of his hatred for those who forced him to live the dark life that he did and it eventually caused his death and kept Itachi from Sasuke and robbed them of having the brother bond they initially did. Sasuke wanted to avenge Itachi as result, meanwhile, Sarada wants to protect. You probably don't understand anything about acquiring the mangekyo sharingan to say that, because to acquire it, uchihas don't need to work hard, they obtain it through intense emotions. Like a betrayal, the loss of a loved one... and Sarada believed that she had lost Naruto (that he was dead) but that she was also going to lose Boruto, it was an accumulation of strong emotions for her and that's how her mangekyo activated.

Yeah the whole point of the "Uchiha curse of Hatred" is to be an opposing force to the "Will of Fire". Both Obito ja Madara are people who teetered on the edge of wether or not to succumb to the hate but Sarada is not the first one to awaken the Mangekyo sharingan while retaining the Will of Fire.
Shisui was the first. And I'd argue that in Saradas mind if Sasuke says he's gonna kill Boruto, that means Boruto is as good as dead so ofc it would be and extreme emotion even if she didn't actually witness such a killing.
