Two meals with one chicken first one chicken tray bake cut up some potatoes, sweet potatoes and butternut squash and put every thing into a roasting pan drizzle with olive oil salt pepper a sprig of rosemary and some time and cook for around an hour and 20 minutes or until everything is browned and the chicken is cooked and with the rest of the chicken cut it all up with some cut up cooked ham a finely diced onion peas and sweet corn in a baking dish with some stock about a third to half way up the dish depending on how much gravy you like season then tear up some fellow pastry into loose balls and place on the top till covered and spray with fry light a much healthier but delicious chicken pie works well with fruit but not with steak hope you like it it’s definitely one of hour family favourites.
Hey kerry, i know i am a little Late to the party, But i love your content. One easy budget meal idea i Do is Broccoli soup with crispy ham and croutons. All i Do is cook 1kg Broccoli in veggi stock, drain nearly All of it after cooking, add some cream cheese, mix it All up and add crispy ham flakes which i make by putting low fat ham or bacon in the microwave for about 2 Minutes. Croutons are great to use up old bread - cut it all up, ad some oil and spices, put it in a pan and there you are - 15 Minute meal nice and healthy :) love your videos

Thanks so much for another great budget cookery video - I really enjoy your cooking videos & will definitely try these latest ideas. You asked if we had any suggestions to tell you about - I often do a large roast chicken (I like your idea for adding honey to the baked carrots). For the next night I use the leftover chicken meat adding it to cooked pasta & cheese sauce covering with breadcrumbs & putting under grill. Another thing we do is place slices of leftover chicken into shallow casserole dish & covering with mixture of 2tbs each chutney & grainy musard, grated cheese on top & under the grill. It is quite tasty. Thanks

I like making Ham and Pea risotto with my leftover bits of ham too. Also, for lunches, I break up one of the 23p cheap 'super' noodles type packs into a deep bowl, add whatever veggies I like, chopped up (pepper and mushrooms are really nice) and bits of the ham. If I can be bothered, I'll put in a hard boiled egg quartered. Then use half of one of the jelly stock cubes on top. Pour boiling water to cover it, stir and leave for about 5 minutes. The stock cooks the noodles, and you have home-made Ramen. Delicious! If you have those soup pots, it can easily be taken into work etc and just pour the boiling water on from the kettle!
@Amy Morey, if you add a few drops of sesame oil & soy sauce it takes it to the next level 👍 I use frozen veg in mine because i always have it on hand.

Another brilliant video Kerry, you really should write a book with all your tips, hacks and budget recipes 👍 I always cook my gammon joint in the oven and then glaze it but I’m going to try your way in the slow cooker can you tell me how much liquid you put in with the joint xx
I would so so love to write a book :) with the gammon.. you don’t put any liquid in.. I boil it twice in water before I put it in to boil off some of the salt but then just put it straight into the slow cooker.. u could add some mustard or honey or any other flavouring you fancy, but no need for any liquid :) xxx
I got my Tesco click and collect order in yesterday. We are following your meal plan for the week! The gammon went in the slow cooker today and we had the gammon, chips and egg with veg for dinner tonight. Tomorrow is carbonara and pizza on Saturday! Then from Monday it's the chicken meals! I'll let you know how it all goes the middle of next week. 😊

Love watching your videos I'm always stuck for meal ideas so these videos really help me when I cook macaroni and cheese I always put it in the oven once it's cooked it comes out so lovely Also one of my money saving meals would be to buy a big tray of mince and cook it up use half for a shepherds pie that can be frozen once cooked and the rest for either a chili con carne or a lasagne xxx

I love these videos! Our family really enjoys using lentils or beans in meals as they are healthy and inexpensive! We make a hearty “bolognese” type sauce with lentils, or a “meaty” filling for tacos or burritos.

For dinner last night I made gammon steaks with home made coleslaw and saved some of the meat to use in omelettes this evening. We always go to family for lunch on a Sunday so only need a smaller dinner. I’m definitely going to try the chicken meals as we have a whole one in the freezer and are only two of us. We will probably be able to have some chicken mayo sandwiches or chicken wraps for lunches too. Thanks for the great video!

No I don’t have a hood and it’s been absolutely perfect not having one.. we have a lot of space around the kitchen for steam etc to move around in so it’s never even set the alarm off! We have a light above the hob and that does need cleaning every few months to remove a bit of grease but it’s again not that bad to be honest! Hope that helps :) xxx

So glad you enjoy these videos :) so for the white sauce I use a knob of butter and then just slowly add in the flour.. until the butter gets soaked up to a ball.. like dough mix.. if u over add the flour your sauce will go lumpy! And then whisk whisk whisk!! I don’t have exact measurements though I’m afraid.. it changes slightly each time 😬😬😬

Mac n cheese went down great . Had a couple of sausages leftover from breakfast so chopped them up and threw them in to get them used as I hate throwing good food out.

No that was the same chicken but I totally forgot to film it before I cut it up and added it to the pot!! The bits I added was the chicken from the legs and thighs which I deboned!! Lol xxx

Thanks, just when I was looking for budget meal ideas as I married a fussy eater which drives me up the wall .. the child will eat whatever I give her(even her veggies and doesn't hesitate to try new foods). It's a pain but gotta feed them

Mac n cheese went down great . Had a couple of sausages leftover from breakfast so chopped them up and threw them in to get them used as I hate throwing good food out.

No that was the same chicken but I totally forgot to film it before I cut it up and added it to the pot!! The bits I added was the chicken from the legs and thighs which I deboned!! Lol xxx

It’s a spray with oil in it so for each spray that comes out it’s only 1 calorie.. it’s a great way of keeping track of how many calories you are cooking with :) xxx
