So... I completed the game and didn't know you could do this to unlock the trucks. Leveling up 2 vehicles in each class also unlocks the Crazy Creatures trucks. So I did it the long way.
You can play split screen in open world and in standalone events. To unlock new trucks and worlds, you have to do single player. I haven't tried online yet.
