  • An utterly irresistible creamy potato side dish with very few ingredients but oozing with flavour.
    Serves 6
    900 g boiled potatoes
    6 boiled eggs
    350 g homemade sausage
    Gratin Compound
    3 eggs
    200 g sour cream
    salt & black pepper
    1. We boil the potatoes and eggs in two separate pots. Then we peel the eggs and we leave both the eggs and potatoes to chill.
    2. We grease a tray with two tsp of oil and we start with a layer of medium cut potatoes, we continue with one layer of sausage and one of egg, finishing with a layer of potatoes.
    3. In a bowl, we mix the eggs with the salt and black pepper adding the sour cream. We mix well and we pour on top of the potatoes.
    4. We put the tray into the oven for 30 minutes at 180° until it is gratined.
    It is served with sour cream on top and chopped spring onion leaves.
