A couple of criticisms here. First and foremost, you are trying to go way, Way to fast and you are making mistakes. You said the dubbing should be evenly thick across the shank, but the dubbing is obviously getting thicker toward the eye. When tying the tail you tried to go too fast when wrapping back to the eye and was inconsistent in wrapping the thread spaces leaving many hairs sticking out needing to be trimmed. You need to show viewers how to use the hair- stacker as everyone may not know what a hair-stacker is, much less how to use one. Your speed left a somewhat questionable job.
If you think it matters on your flies go ahead, but I guarantee one thing, and its that trout do not care. When he says "make an even body" he just means make it relatively even. If you look at the end product you can't even notice the mistakes he made, plus most bugs on the water that you are imitating aren't perfect and have mistakes to them as well.
Well done on the salmonfly. We don't have them where I fish in the east, but I tied up a couple anyway.
Would something like this work on a shooting head as a wetfly? Maybe some modifications? Thx!

Also, you don't mention what hook you are using.
