Best time to go sailing in Belize would be in March and April because it's not hurricane season. The best coconuts are when they're green and you open them up and the white part is almost like a jelly.

I went to Belize in the summer of 1968. There were no tourist "traps" or sprawling resorts. It was just common folks getting by. It was amazing. Beautiful country, but I am sad to say it's probably not as friendly as I found it back then. Even as a green 18yo, I could see the potential. I wish I could have invested then!!
