Put ginger chunks in the jars and pour the brine in the jar till the ginger is covered. . ( you may also put juliann of fresh or dried red perilla leaves in if you like. ) 7. The pickle shall be left in the fridge for at least 1-2 days, the longer the ginger tasted better.
