The weigh-in is not the same day as the fight. They dehydrate themselves to temporarily lower their weight to make the cut. Immediately after they step off the scale they start rehydrating and regain most of their weight. They may not be at 100%, but having the extra mass/muscle is a huge advantage, and is why fighters are incentivized to carry more mass than they otherwise would. Cyborg could easily make weight if she reduced some of her muscle mass, but she/her team doesn't want to do that because it would reduce her giant strength advantage.

Performance enhancing drugs and this crazy dehydration are on par in my eyes. Both are a way of trying to change yourself in a way to gain an advantage on fight day. They need to stamp out them both as soon as physically possible.

As a taekwondo player I have seen things like this. Im in high school and I've been playing for over a year and usually plays on heavier bracket so losing weight is not really a big deal for me. (Maybe i do need to lose but usually around 1 or 2 kg) however, I do see my teammates pain on losing weight. One of my teammates loss 1.5 kg in just a few hours. She was looking pretty awful. Training got her hard and she hasnt been eating for the past week. I once had a teammate who failed to qualify for her regular weight division so in order for her to play, she needs to drop 2 categories down. We told her to just give it up since its only a few days till weigh in but she pursued it anyway. She need to drop 10 kilos (22 lbs) in just 5 days. (Remember that she is still in highschool 16 yrs old) she somehow made it to her target weight but not without suffering. She hasnt been eating properly, only a spoon or two of rice everyday. She only drinks water and also takes laxatives to remove those water she has been drinking. She would wrap her self up at home and wear layers after layers of jacket and sauna suits during training just to lose those extra weight. Nonetheless, it was horrifying. During match she collapsed out of nowhere due to starvation and over fatigue. All those efforts just for her to be disqualified....
