9:40 you are wrong... We trivandrum people are using ' valanpuli' for making fish curry... Kudam puli is famous in middle kerala...

I love the way you urge all cooks, to understand and appreciate the time honoured preference for clay pot cooking to all other modern utensils.
None of them can match the excellence of taste, that food cooked in clay pots can provide.
It was a delight to watch and listen to your master class, missing no detail of the taste enhancing properties of each of the ingredients used.
Also, it has encouraged me to try out fish heads in my next curry.
Normally I discard it, gills and all.
I have only heard my Bengali friends going into raptures, when using fish heads in their fish curries, and listen to how they bribed their local fish vendor to keep this prized fish part away from the eyes of their neighbours. So intense was it's gastronomic appeal !.
But I was a little squeamish about using it , and continued my practice of tossing fish heads aside along with the scales, fins, guts and entrails.
But now that you stress the goodness of adding fish heads, to take the dish to another level, for sure I am going to follow your advice.
