I spotted these multi color carrots at a Trader Joe’s and made this recipe for a holiday meal thus week. They were a huge hit and so Easy! I cut some in halves since they were much more varied in size than yours. So yummy!

This is a really easy dish! And it can be done with regular carrots too. Of course, the rainbow carrots do make it so much prettier :)
