Authentic Shrimps Fried Rice with Mango-Apple Salad

- Almost everyone has tried Asian cuisine, and almost everyone has tried takeout fried rice. But I think you deserved more than that. So here's a healthy alternative to popular take-away that you love. This is am easy, authentic shrimp fried rice recipe with mango-apple salad. You can make it as a quick dinner on any weeknight!
Ingredients for the mango-apple salad:
1 mango
1 apple
A handful of coriander leaves
1 teaspoon Thai sweet chili sauce
1/2 teaspoon freshly squeezed of lemon juice
1 teaspoon of fish sauce
A pinch of chili flakes
A pinch of caster sugar
Ingredients for the fried rice:
3 large eggs
3 1/2 tablespoons of olive oil, divided
450 grams shrimps extra jumbo
2 garlic cloves
3 cups of cooked rice, cooled
1/2 teaspoon of white pepper ground
1 tablespoon of fish sauce
5 scallions
