I have one question: I read many times, that we should not touch the kombucha with any metallic utensil... but you have it in a metallic bowl... so, not a problem at all, right? I also have a big one and it would be great if I can really use it. They say not to even touch it with a metallic spoon! Thanks in advance!
If it's very strong it may have fermented a little too long. heat and humidity /time of year can contribute to that needing a shorter fermentation time. you can still drink it but it will have a higher alcohol content. you can add more fruit for flavor

@hennesseyme9112 You do not need an airlock when you make a scoby by hotel. I generally put this in a Mason jar. And use parchment paper for the metal lid. And put it in the refrigerator and it will last there four a long time

I do have plenty of extra scobys but it's been hard to find uses because of the strong vinegar flavor that goes with it.
It's all about adding strong flavors to mask it

If its for a very short time it's ok. But in general don't use metal.

That would actually kill off the good bacteria that you want from it. any souce of heat will kill it off which is why you want to keep it raw
