I am very confused on everyone cutting on wood. As a food business owner( I retired early in the 1990's) our govt food sanitation agency wouldn't allow us to cut on wood as they said it couldn't be sanitized properly. Meaning it could allow food to be kept in the small cracks. When did this change???
That's what I always thought, but now they're saying that plastic cutting boards cause micro plastics to get into food. I guess one has to decide if they want to risk bacteria or plastic.
