Toffee is one of the hardest things that I have ever made. 3rd time isn’t the charm for me, it’s 6th lol. After successfully making it, I almost cried. For those who are about to make the freaking toffee, make it. Once you’re successful you will love yourself more than you had ever did before. Follow her tip also, it’s really helpful.

I don’t think you could reduce the sugar in the toffee because it won’t harden. I’m not sure about the dough... maybe it would the cookies would turn out harder?
i dunno man, toffee most def doesn't belong in a cookie imo (or anything doughy for that matter). it looks to me like alvin was just flexing (which he tends to do alot in his videos) to make something different from the pedestrian stuff (a.k.a. the best stuff). aside from being a real pain in the ass to make, i also imagine toffee hardening on room temp, so it gets that hard candy texture, which is a big 'no' if you ask me. if going for the flavor, why not just use soft caramels? other than that, everything looks great, these look very chewy and for those who prefer it, it's gotta be one of the best recipes. however, I'm not very convinced 48h wait is truly necessary. blind taste test should be done comparing overnight vs. 2-day chilled dough. there's a big chance there won't be a significant difference, and that alvin did the extra day just for the clickbait (like he did with the 100h brownies).
Wait so you put the cookies in after they’ve come to room temp?! I’ve been making these but they’re still kinda thick, I want them almost as thin as yours. Imma leave some out to come to temp. Fingers crossed
