I used to work at Shake Shack. The amount of effort that goes behind every single burger is outstanding. Part of my job was to make sure that every burger looked “picture perfect” so yeah Shake Shack=quality
I don’t know if Josh has done this but I would really like to have an episode where he talks about how he became so good where he trained who mentored him how he close the path etc. and of course if he is ok showing us the first fish he mastered that would be awesome. IMO the bun is the most overlooked aspect of many high-end burger places, or people who review burgers. The ratio of meat to bread, how soft the bun is relative to the meat, and how well it holds everything together will make or break a burger IMO. Potato buns are great, but being from CA the gold standard for me is the sponge dough buns from In-N-Out.

You're missing the point of the series. Josh is not competing with minimum-wage workers from fast food joints working to pay off their debts. It's ridiculous. The point is anyone can make a better, healthier and often cheaper (well there is another series for that) version of these meals. His recipes are what's important, his culinary skills will obviously be better. The fact that his home-made recipe could compete with the secret recipe of a multi-million dollar company like Shake-Shack is much more impressive.

Had my first shake shack burger last week. Have to say it is a damn fine burger! I spent about 4 hours in a small room with no windows doing terrible things to the environment shortly afterwards but I can't prove it was the burger. Even though that was the only thing I ate that day. Still, it was a very nice burger.
Mark is awesome. I’m an Angeleno, and, when I was younger, one of my favorite adventures searching for the best burger in LA. Super fun and never ending options!

It they smash it that thin its certainly not a cook issue. Is this the same place each time or generally anywhere. Some people just have overly sensitive stomachs. That said, at times I suspect the fry grease and cook tops. If same cook top is cooking chicken and beef on it. Possibly the cause there.
