Re flour: Often when breading meat, you want to dredge in flour before the egg. If you've ever had trouble getting the egg to stick to the slippery chicken, this is why. Wet sticks to dry and dry sticks to wet. So you do chicken (wet) > flour (dry) > egg (wet) > breadcrumbs (dry).
If you bread the chicken in flour, then egg wash, then the other seasoning (in this case parmesan) everything will stick nicely on the chicken and it will also make it crispier!
