Christmas Cookies

- For the holidays, I wanted to find a variety of cookies to make to add to my #100newrecipesayear series where I try out different recipes throughout the year.
Here are 4 different cookies plus a truffle recipe you can try:
Mary Berry’s Christmas cookies: Found on a social media post by “Recipes Clan”
Ingredients
100g caster sugar
100g soft light brown sugar
75ml vegetable oil
2 eggs
200g all purpose flour
Pinch of salt
60g cocoa powder
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground ginger
40g powdered sugar
Instructions
1. Preheat your oven to 350°F. Line parchment paper in a cookie tray and set aside.
2. In a large mixing bowl, you’ll put together your sugars and wet ingredients: caster sugar, brown sugar, vegetable oil, and eggs until well combined.
3. In a separate bowl, you’ll put together your dry ingredients: flour, salt, cocoa powder, baking powder, cinnamon, and ginger.
4. Next, you’ll put your dry ingredients into your bowl of wet ingredients. Use a rubber spatula to fold in these ingredients together until a soft dough forms.
5. Roll portions of the dough into balls, roll to coat in powdered sugar
6.Place the cookies on the prepared baking tray and flatten them slightly with your fingers. Bake for about 16 minutes, or until they are slightly risen and have a cracked, crinkled top.
We enjoyed these cookies. I appreciate that they were simple to put together, like a basic cookie recipe. I was unsure about cocoa powder with cinnamon and ginger but you know, it works! These lovely cookies were warm (because of the spices also!) and delicious. Leave it to Mary Berry to have a great recipe to share!

What an adventure to make these cookies! Each recipe has been added to my #100newrecipesayear series where I try out different recipes throughout the year. When I get to the end of the year and am falling behind on reaching my goal, I kick into high gear and baaaaaaaake! The holidays help to provide a plethora of recipes to experiment with and often, I find ones that make it to the “bake every year at the holiday” list. Happy Christmas!
