      Mary's Nest hi Mary, I’ve been trying to make my own pickles with a salt brine and leave it at room temperature 72-77 degree - leaving it for 10+ days but my pickles are not getting sour. What am I doing wrong ?☹️ thanks for the help.

    My grandma always said you absolutely needed to add bay leaves when pickling vegetables, she died this year at the young age of 99 and your video made me think of her wisdom and made me smile thinking of all the recipes she taught me and that time spent together.       I started my first pickle ferment 2 and a half weeks ago and tried the first pickle today, it's a little soft. Wish I had seen this tip then but soo far I'm really happy with the flavor.
      I took off the tops and stem, I had heard before that there's something in the stem that helps it decay. Theory sounded reasonable atleast.
      If you've heard of this, let me know, as I did throw in peppers in the small overflow jar . Curious if they might have helped

    You're one of few ladies who are a delight to listen to here. you're unpretentious, knowledgeable, and thorough.
    My Polish grandmother, years ago, used to pickle cucumbers just as you do here. However, she used to weight the cucumbers down with hardened ends of baguette bread or the hardened part of sourdough, rye, or whatever kind of bread she happened to have baked. She told us once that the bread helps wit the fermentation process and imparts a unique and pleasant sour taste.
    Another note, when she was pickling at a time when our vines had lost all their leaves, she used oak leaves from an old oak tree at the end of the property.

      Oak leaves and grape leaves has a lot of tannins - so your Grandmother was wise in ways that we've lost :) Thanks so much for sharing the tip about the ends of bread to cover or weight the pickles - gonna give that a try!

      @@brigitteg440 be cautious using grape or oak leaves. The only batch that went south on me had grape leaves. My next attempt will be to steep the leaves in boiling water first. I'm in a humid climate prone to fungus so I assume that is what spoiled the batch.

      Bread crust is a neat idea and I understand the reasoning. Raspberry cherry and horseradish leaves I use and also my red current leaves. I tuck a big horseradish on the top to keep the pickles etc down and just flip the jar upside down a couple times a day while fermenting to get things on top wet. Works like a charm even if anything does float to the top

    I have been wondering why some of my pickles were mushy and others crisp, and now you gave me the answer: the tannins! My crisp pickles were fermented with bay leaves, unlike the mushy ones. Thank you very much for this most informative video! I learned something very useful!

    Great video! Love the step by step process and explanation. I would also add that dating your ferment is important. I use a piece of scotch tap, fold over the edge of one end, use a magic marker to write the date, then place it on the jar. It takes the guess work out of when that jar was filled. And with the folded end it is easy to remove when the jar is empty and needs to be washed.

      Yes or masking tape or freezer tape. I sometimes use wide tape and write my recipe used - for example on my pepper/tomato hot sauce ferments.

    Quick tip from a homebrewer. Leaving water to sit in the open will not gas off the chlorine. Most utlities now add chloromines to the water instead of the pure chlorine that they used to use. It will not vaporize very quickly from the water. One of the few options is to add campden to the water. It binds with the chloromines and drops it out of suspension, but because campden can be very toxic in its undiluted form it only takes a tiny amount to do the job. About have an aspirin sized tablet per 5 gallons. So unless you brew or make wine just stick to jugs of distilled water from walmart.

    Hi Mary,
    I just made a batch in a 0.75 litter jar (Jacob's coffee).
    I don't have bay leaves, so I used your tip with the tea bag.
    Also, used your other tip, and placed it inside the oven, togethet with the fermenting mustard,
    pear vinager and apple cider vinager.
    Thanks for all your educational and inspirational videos.

    Regarding tap water and chlorine: Many municipalities now use chloromine (sp?) instead of chlorine. I believe it's chlorine bonded to some other chemical. The reason for that is so the chlorine WON'T evaporate out. Letting the tap water sit on the counter won't get rid of the chlorine, in that case. Not to mention fluoride and who knows what else. If you live in a municipality of any size, it'd be best to just forget about tap water.

      I use a water filtration system on my faucet. I don't think my town uses that, but I hope the filters get rid of that too!

      @@lorimast I'm NOT an expert on this, but I don't believe the filter will do it unless it is designed to remove chlorine itself. When they first started using chlorine, aquarium users were advised that the only way to remove it from the water was to ADD a chemical to break the bond between the chlorine and the other chemical it was joined with. Many of the filters on the market are designed only to remove particulate matter, such as lead and minerals.

I just subscribed and will be watching your other videos as well. I'm sure the probiotics will help my digestive imbalance due to my diabetes.     I'm so excited I had to share. Unable to wait out winter, I bought some pickle cukes, $4 for six cukes - a little rubbery and too well washed - par for store bought. Today I picked the first of my home grown pickling cucumbers. They are perfect! They're hard and crisp and sweet...yeah, sweet. I can see that they will feed the fermentation. (going with 40 grams salt per 1 1/2 liter). I heard about a sauerkraut maker, who sells commercially, who uses no salt (!) Apparently, pickles are "salt to taste". It's not the salt that preserves but the little alcohol and the predominance of the healthy yeasts, formed at fermentation - that keep other yeasts from intruding.

      @@Katalinmason Fermented sun pickles.
      Recipe.
      Soak and wash gherkins.
      Cut tops and bottoms off.
      Cut as liked. Quartered. Sliced. Or whole. If whole consider poking a skewer through middle to help penetration ..
      Bottom of jar. Stuff.....
      Dill, a few garlic sliced. A little horse radishes Root. Mustard seeds. Peppercorns. A chilli if you want. A little onion. And a bay leaf to top also a slice of lemon.
      Stuff the jars with all of above or a selection of ingredients from the list.
      Dissolve in 1 litre of water 4 heaped table spoons of salt.
      Pour over and push down veg with my "toppers. "
      Then take out to the sunshine.
      Cover to prevent flies.
      Leave for two to three days. Then bring in and taste.
      Cloudiness shows fermentation is on its way. Hope that's ok. I think I'll have to shoot a video on it one day.
      If you like the flavour refrigerate to halt fermentation.
      Lid Them.
      You can sieve out veg bits and Repack then lid them.
      Keep for a few weeks.
      Joe and the kids adore them. Full of probiotics and vitamins.

    tea bag in the bottom...what a unique ingredient...it's motivated me to experiment now
    I use 1/4 C kefir whey...really gets it going...using Persian cucumbers...toasted some yellow & brown mustard celery & coriander seed & a tad of Korean red chili powder & dill...
    you're a joy to watch...great teacher all very clear & well understood

    Hello, sweet Mary! Thank you for a video so full of information! I enjoyed it very much. I began making sauerkraut a couple of decades ago; I was taught by a sweet young lady who was new "over here" from Yugoslavia. She did one really interesting thing: she alternated hot and cold water with the salt. She wasn't able to explain why, but it was the most delicious sauerkraut ever -- even better than what I've made since, being too lazy to alternate water temps after all the hard work of chopping and bruising the cabbage. Thanks again!

    I have been using grape leaves, and like how it works. I go out to the garden and grab a new stem that is growing where I don't want it. Then I remove those young tender leaves and use them to pack down the ferment. Double duty. Thank you for sharing the other tannin sources. Now I just gotta try fermenting the carrots.

      I wasn’t sure if I should use mature or young leaves.
      I have two huge organic grape vines and like to use what I have on hand.

      @@jthor3097 Young leaves that have grown big enough to get the job done. There may be a fine powder on the leaves. But the old ones that don't look edible should be left right where they are... on the vine. Many cultures use grape leaves as a wrap for steaming too. I've even seen them canned at the grocery store. I was told it's the lazy way to have them for wraps.

    I have a fridge full of your veggies. I just harvested 4 beautiful cucumbers just now and I have to ferment them. I do not like fresh cukes, I only like them fermented/pickled. Thanks again. I love how easy your recipes are.

    I use canning jar lids. Put the lid of finger tight as if you were hot bathing them. The extra pressure will push past the seal and it will be tight enough to seal anything from coming back in.

    We love watching your channel!
    We are newbies at fermenting and made a mistake by using the pickle pipe top and not putting a bowl underneath. Obviously, we did this before seeing your video. We tried a Kilner fermentation jar and it worked without the mess.
    Now we are going to make your sauerkraut and pickle recipes. Thank you so much for your channel.

    Hi Mary. Thanks again for a great video. I have used bay leaves for tannins and also pomegranate leaves will work, along with banana leaves. I also read that oak leaves will work. I recently tried the oak leaves and pomegranate and so far so good. I hope you dont mind me posting on your videos. I just love them!!
    Oh, I forgot to mention mine are refrigerator pickles. I hope try your method too.

    I haven't tried fermented ones but my dill pickle recipe is heavenly and is a Mennonite recipe. Lady who taught me said use grape leaves to make crisper pickles. Said of can't get grape leaves, mulberry leaves or horseradish leaves will work.

      I use Bay Leaves in my dill pickles. I don't can my pickles but use a 2.5 gallon glass jar with a lid and a gallon sealed plastic bag for a seal, over a few cabbage leaves. I also put carrots and half radishes in my brine with my pickles. They are absolutely marvelous!

      How many grape leaves for a quart jar? Are wild "fox" grape leaves okay to use?

      @@shaysinclair1186 I believe any actual grape leaves work. Just one good sized one per quart. I plan to use wild ones from the Nature park behind our house. Small cucumbers will be crunchie, but medium size are too. Pack fresh close to when picked as can. Use pickling cucumbers if can. Can also use hard, small green tomatoes with the dill and this brine and add a hot pepper or two for another delicious pickle.

    Just the information I was needing! Mary, you are a gifted teacher. I believe teaching is a separate gift on its own. My husband (Drummer) always says just because you can play an instrument doesn’t mean you can teach it. Same with cooking....the food arts!🥰 So many can cook, but not teach.

      Jarod Thurley a couple of days? They don’t even hardly start to ferment in a couple days. It take a few weeks just for that and around 6 weeks before they become really good with the seasoning flavors.

    Very thorough, I've finally done this successfully. I like to put whole garlic cloves in my brine and I think it goes well with the dill. I will have to try your spice combination as I usually only add the peppercorns and mustard seed.

I wanted to say a huge thank you for being my mentor and not even knowing it! I have wanted to make fermented dill pickles for ages but have always psyched myself out but after watching this video i feel confident and so I am going to be making these on my channel!     I’m just now learning how to pickle again. My grandmother used to do this and I helped as a youngster but I have forgotten most of what I knew. So I like the idea of fermented pickles as opposed to even the slow cook method which seems to be what everyone else likes to do. So I have a 1 gallon crock, a 4 gallon crock and a 6 gallon crock.
    My first question is regarding bay leaves vs. grape leaves, both of which I have. My bay is a sweet bay bush so my bay leaves are fresh rather than dried. So, grape, bay, dried or fresh? Second question is regarding the salt. I have several pounds of salt that I gathered in Mexico at some salt beds where it is evaporated and bagged for sale in Merida. I also have Himalayan pink sea salt. So many choices. Of course I also have pickling salt and course grain kosher.
    Finally and this is really where I wanted to go first- If I make up even a small batch in the 1 gallon crock, if I don’t have room in the fridge for the finished pickles, is there a way to can the pickles without killing the good bacteria?
    Looking for help.

      Hi Jack, all great questions. And your comment was fascinating to read. You can use whatever you have that contains tannins whether it’s fresh or dried. As to canning, unfortunately no… There is no way to preserve the probiotics because the extended canning time and high temperature is very damaging to them. However, do you have the option of a cellar or a root cellar? If you can find a place in your home where you can maintain about 40°F, you can store your ferments there. Hope this helps.       Hi Susie, Thank you so much for the kind words!! Generally, I like to start with a tablespoon of maple syrup to a quart of pickles and then work up from there. If you are using white sugar, take out some of the brine and dissolve the sugar in the brine then add it back in. As with the maple syrup, I would start slow - a tablespoon and work up from there.     Waaaaaay too easy! I can't find Fermented Pickles anywhere in my small town and I make kefir, honey pickled garlic and yogurt a lot so I have all this fermentation stuff like the glass weights and several carbon release methods including the rubber nipple you were showing. Now I just got to find some small cucumbers, that should be easier. Thank you for the easy to follow and thorough instructions!

I will be trying to make my first batch of natural pickles right now - I tried making sauerkraut last year and it ended up like bleach. :( Hopefully I will succeed this time, and I will be trying a basic spice blind with it and bay leaves.     You can also add grape leaves ( what folks around the mediterranean did for centuries) or leaves from black current bushes or cherry trees ( what the russians always did) for the tannins.

    Cucumbers are one of the few Daniel loves as is. He also loves them pickled. I love them either way. Mom would slice them in circles. Then make a dip of vinegar, soy sauce, and garlic powder. It's tastes so good. Lately our days have been hot but the nights have been on the cool side to the point where most I notice chill bumps on my skin sometimes after the sun has gone down. I have the air conditioner in the master bedroom set to energy saving mode so it will shut off when the desired temperature is reached or it's below that. It's great since I like to be completely underneath the covers when I sleep and more covers have more light blocking quality as things like my sun rise alarm clock lamp is visible then..

    Wonderfully informative video. I appreciate your efforts. I've never fermented before and I'm looking at a lot of videos to educate myself.
    One question I have is about ensuring that your product is not exposed to oxygen (i.e. anaerobic process). I understand the care one has to take to ensure everything is submerged under the liquid so it is not exposed to brine. But I'm thinking that if you use one of those "valves" or caps that automatically vent, won't the surplus CO2 push the oxygen out of the container? Thus, one would not have to take so much care in "weighting down" whatever you're fermenting?

    Because of this wonderful video I am going to try fermenting my pickles this year. I purchased a kit pretty cheaply and my cucumbers are doing good so I'll be ready when they are. I also love your idea about the tea bags and bay leaves so will also be trying those. So thank you very much.

    Really enjoyed the video. I have a question on the temperature when fermenting. Our kitchen here in the Southwest can be 85 to 90 degrees, will this harm the fermentation process? I was told 65 to 72 degrees is best. Thank you

      Don Plaisted - Hi Don, Thanks so much for visiting. Yes, you were told correctly. You can maybe get away with up to 75 degrees but much warmer allows for the proliferation of bad bacteria instead of yeast and lactobacillus (the good bacteria). Do you have a cooler area? Maybe in a dark pantry on a tile floor? I live in central Texas so I know how hard it can be to ferment this time of year!!     Mary, when you store your, let’s say pickles, do you leave the weight in the jar or take it out? God Bless you Sweet lady 🇺🇸

      Hi Carolyn, Thanks for visiting! When I store my pickles in the fridge, I remove the weight. Once ferments are refrigerated, they no longer need to be submerged under the brine. Hope this helps. :-) Love, Mary

    When you talk about completing the pickling process you say to put the jars into the refrigerator. I don't have the room in my fridge for these jars. Is there a way to make them "shelf stable" so I can leave them in my cupboard?

      The only way to stop fementtion is to kill the bacteria with heat or put them to sleep in your fridge. You wouldn't want to go through all the effort then destroy the the beneficial bacteria.
