I'm a pizza aficionado and have been making my own pizzas from scratch for years . I have been following 12 time world pizza champion, Tony Gemignani , and when I saw you using poolish starter and that you ferment your dough 4-8 days before making your pizzas, I knew you were the real deal, since virtually no pizzerias go to the time and trouble to make their pizzas like that . Bravo !! I will definitely have one of your pizzas next time I'm in Toronto . Very impressed !!!

I’ve made tried Genignanis master dough with starter many times. I prefer his master dough without starter. I don’t prefer the very yeasty taste. Bulk ferment 24 hours. Then ball and another 24 hours.

Would love to see Midtown get some more love. Certain online blogs always seem to pass over anything on Yonge north of Bloor and south of Sheppard. It would also be a perfect location for another SUGO with its rich history of supporting Italian-Canadian cuisine (Classico, Grazie & Ferraro's to name some long-time neighborhood staples).
A lot of good spots in Midtown!

They used to have Mama Conzo pizza, which was the best of the best but after rebranding they removed it, how and why is still a big question !!!;(

We have a Pistachio and Mortadella Pizza on our menu (Food Truck) it’s hard to sell one night and it’s 30% of sales another night.
We also use local flour and long ferments.

I'm all for supporting local business's and I am sure your pizza is amazing but I simply cannot justify $32 for a pie. It's unfortunate your insanely high leasing costs are passed onto the customers otherwise had you been situated somewhere else you would be able to offer this exceptional pie to a more variety of people who can actually afford this during these rough times of inflation. It's price gouging 101. Then again all your pies are priced the same even though some have more than 5 toppings on them while a basic pepperoni has a simple one.

Nah. Canadian flour is pretty strong with good amounts of gluten. Overpriced foreign flour is not necessary when you use quality Canadian flour.
@@domenicpolsoni8370So I'm investing $1500 in a stainless steel propane / wood oven. I know that's mickey mouse vs pro units in restaurants like Conzo's. Everyone's telling me to buy Caputo from Vincenzo's or who ever has it. I mean if I can get the impasto mix right with cdn flower I'll be happy saving $$$ cause Caputo ain't cheap. I made an oak counter about 3'x3ft out of left over 3/4 h/w raw oak floor. I'll bring the family to Conzo's one day, maybe you can teach a few things. My nonna passed away and all the recipe's were lost too

But I think it's hilarious how Italians love to cling to their culinary traditions to the point where they shout down anyone who puts "foreign" ingredients on a pie which is rich when you consider that their main staple - pasta - was brought over from China, a country that does it better than they do. I'm sorry but Asian noodles from various countries hold up much better than typical Italian pastas. Want to have an even bigger laugh? Tomatoes originated in the Americas. You should be thanking Latin Americans not only for Maradona, but the main ingredient in about 75% of your sauces.
The bottom line? No one outside of Naples gives a damn about the AVPN. Besides, if the pizza uses local, fresh ingredients and tastes good, that's all that matters. I've never heard anyone order a pizza at Bar Sugo (formerly Conzo's) and ask if it adheres to the strict conventions of the AVPN. lol Grow up.
