    Ingredients:
    Shrimp: 500 grams, preferably large and clean.
    Coconut oil: 2 tablespoons.
    Onion: 1 medium, finely chopped.
    Red pepper: 1, cut into thin strips.
    Garlic: 3 cloves, minced.
    Green pepper: 1, cut into thin strips.
    Tomato: 2 medium ones, chopped into cubes.
    Coconut milk: 1 can (400 ml).
    Fresh cilantro: A handful, chopped.
    Lemon juice: 2 tablespoons.
    Salt and pepper to taste.
    Ground cumin: 1 teaspoon.
    Curry powder: 1 tsp.
    Sweet paprika: 1 teaspoon.
    Chili powder (optional): ½ teaspoon for a spicy touch.
    Instructions:
    Preparation of the shrimp: Wash the shrimp under cold water and dry well with absorbent paper. If you wish, you can leave the tail for a more striking presentation.
    Preparing the sauce: In a large skillet over medium heat, heat the coconut oil until melted. Add the onion and cook until translucent and soft, about 3 minutes.
    Add the vegetables: Add the peppers (red and green) and minced garlic to the pan. Cook for about 2 more minutes until the vegetables are slightly tender.
    Add the seasonings: Add the cumin, curry, sweet paprika, chili powder (if you are using it), salt and pepper to taste. Mix well so that the spices integrate with the vegetables.
    Add the shrimp: Add the shrimp to the mixture in the pan and cook for about 3-4 minutes until they change color and are almost cooked.
    Add the tomato: Add the chopped tomatoes to the pan and cook for another 2 minutes to soften slightly.
    Pour in the coconut milk: Reduce the heat to medium-low and pour the coconut milk over the shrimp and vegetables in the pan. Mix everything gently so that the flavors combine.
    Simmer: Let the mixture simmer for about 5-7 more minutes, stirring occasionally, until the sauce thickens slightly and the shrimp are cooked through.
    Adjust the flavor: Taste the sauce and adjust the flavor with more salt, pepper or lemon juice according to your personal taste.
    Finish with fresh cilantro: Before serving, sprinkle fresh chopped cilantro over the encocado shrimp for a touch of freshness and color.
