    I keep telling myself I don't need any more canning jars, and yet again I find another recipe to can. This looks great!

      Hahaha! I've given up on telling myself that! Every time I do, I find myself with one or two more case in my cart! 😆 Those tomatoes are delicious! We had a jar the other night and used what was leftover in a soup. If you want them hot, though, I recommend using more hot peppers than sweet peppers or leaving some of the seeds and ribs or both! 😁 Mine didn't have any heat when they were done.

    Why did you use lemon juice if you're pressure canning? I didn't think you had to.

      I don't think it is required if you are pressure canning, but I like my tomatoes to have an acidic flavor, not sweet. I don't always add it (I canned plain heirloom tomatoes without adding it and using the water bath method for years), but I have found in the last few years that I like the flavor, especially if my tomatoes are sweet. I figured with these having other ingredients, it wasn't going to hurt anything, so why not? ☺️

    In all my 40 yrs of canning, I’ve never seen anyone peel tomatoes like that. Dunk them in boiling water for 30-60 seconds and the skins slip off, or core them and freeze them and the skin slips off.

      In all my years of canning, I had never peeled tomatoes like I did that day, nor have I done it since. I had a very specific reason I did it that way, and it was actually very quick if you are handy with a knife and find your rhythm.

      @@mymodernhomestead what was your specific reason ? Is there a reason for not dunking in hot water to slip the skins ? I guess that and freezing them is the only way I’ve done it so don’t know any better.

      @rnupnorthbrrrsm6123 , I was in a hurry and didn't have the time or "want to" to deal with the extra mess. I knee I could hand-peel them more quickly than the time it would take to get out everything I needed, run the water, wait on the water to boil, prepare the cold water to dunk them, peel them, and then clean up the mess. I normally freeze my tomatoes also.
