- Cupping is a widely observed practice in the specialty coffee world for a plethora of reasons, from green buyers cupping samples for purchase to roasters cupping batches as part of their quality control regimen and even to baristas cupping offerings to decide how to brew them.

I have been into specialty coffee for years now and have still never done a cupping. I might finally do it based on your recommendation.
Do it as many times as you can. Totally worth. It's better to have coffee taste wheel somewhere near, just in case
It is an incredibly fullfillng experience that will only help to further your flavor perception
@@LanceHedrick That's definitely the goal. I've got everything except the fancy spoons.
Thanks for the tip! I'll be sure to pull up the coffee flavor wheel.
nice video Lance. Just a tip for other people: the first time i did cupping, i tried it with 5 coffees, which i thought was a bit too much and a little too overwhelming. 3 would be perfect for a start i think.
Your silliness is delightfull. Your personality is what makes your content even better. The precision "nerdyness" helps a newbie like me. I am consuming all your stuff. Thanks for putting it out.
Thank you for watching and commenting! I really appreciate it, especially on this video haha! Makes me sad this one is my worst performing. Cheers, Marty!
Always love the silliness you bring to your videos. You show your character and that's what people love to see. Great video as always
Thank you so much! Really appreciate that, friend 🤗
“GrOooOOoss” *doesn’t even skip a beat and continues on talking* Lance, you’re the best! I about fell off my chair laughing. 😂 Thanks for intermingling of comedy and coffee edumacation!
Came here from a Kyle Roswell name drop. Great video - I've heard people talk about chipping so frequently just sort of assuming listeners expertise, so this was super. I will actually do a cupping as opposed to hearing about it!
Thanks for the use of plain language steps of set up and execution for a home cupping for coffee. I am using your recipe for my home cupping.
The "g-ross!" moment with the dog hair was the highlight for me. No, but very simply explained and accessible. Fjord are the real deal too.
7:53 breathe in before going down... words to live by. 😂😂😂
The problem is bias. I find it easy to evaluate upon complete surprise. Informative vid.
Thanks.
Thank you for this❤ I was able to understand why I felt like the least “complex” brewing method (coffee in a fine tea strainer fully immersed in hot water for 4-5 min then just pulled out) tasted the better vs pour over styles! 🎉
I had thought it was an “improper” method because I started using the tea strain when I used to not have any coffee equipment😂
I've been roasting at home on a Behmor 1600 for years, I think you've convinced me to start cupping!
I agree with Lance's assessment that cupping has to be fine grind. I drank Tubruk everyday, which is made just like cupping but we drink it the whole way, and in my experience, anything above medium fine will taste just like black tea, very muted. And the recommended way to drink it is also to sip it til you make it.
Love the channel Lance, the way you put stuff across is fresh and informative. Nice one bro 😎 Keep up the great work 👍🏼
Thank you! This gives me so much motivation. Appreciate it!
@@LanceHedrick Hey no problem at all. I’ve only been into the hobby for just shy of a couple of years after watching one of James’s vids. Coming from an engineering and then a chefing background the anal aspect of speciality coffee ticks a lot of boxes lol. So much to learn it’s crazy. I’ve picked up a lot of information but I think I would benefit from doing a days course at say square mile (I’m uk based) just to bring it all together and give me confidence to know I’m doing it right, what do you think? I guess it’s like chefing in some respects. I once asked my head chef what constitutes a great dish he replied, apart from the classics as long as it tastes good it’s good basically. Thanks very much for your reply it’s as equally inspiring for me also.
huge agree on the fine grinds for french presses. one thing you didn't mention is how the temperature drops quickly and consistently throughout the brewing, hindering extraction even more. i grind as fine as i can go before it all starts going right through my filter, which is 11 clicks out from 0 on my hario skerton pro
Thank you for this informative video! It would be fun to watch a live of you cupping with others to see how different people taste the same coffee.
Hey! The last two IG Lives I did were cuppings with others! If on Instagram, they're the two most recent videos on my IGTV
Thank you Mr. H!
Goals! Thanks again for sharing your knowledge! Now off to hunt some proper cupping spoons!
Loving the coffee station setup.
Thank you! Years and years of accumulation
Cupping? Yeah, I always drink my coffee from a cup. Tried drinking it straight out of the portafilter once, but there were too many grinds…. tried it direct from the pot once, but it made a mess and burned/scarred my face for life. It was a hard lesson, but I’ve returned to cupping my coffee
Have been meaning to try this for years.
Very nice coffee setup, Lance. 👍🏻
It's time to give it a try!
Great video! I signed up for Leaderboard coffee so I will almost certainly need to cup for that
Lance thank you again for sharing your knowledge!
Thanks for watching and the support! Means the world
Kindly asking for an Aero Press video, sir :) Thank you for dropping all the knowledge
For sure! Probably will let the steam pass on Hoffman's first so people don't get mad I made one hahaha
Nice and practical techniques as usual. I really enjoyed this!
Thank you I'm so glad you found it helpful 🤗
Awesome video, once again! Loved it!
Something of note...
Specifically looking for what the:
Body, mouth feel, acidity, sweetness, flavors - initial, mid and after, etc. really helps me to focus on and take note of what I'm experiencing.
Writing it down on a pre-written list/chart takes it to another level for me, personally.
A gem is easier to find when you know what you're looking for!
Of course! I didn't want to overload people with this information for their first time cupping. Lol
@@LanceHedrick Good thinking!
Looks like you've really got some folks excited about cupping! Woohoo! Score!
I'm even more excited about cupping as well!
Thanks again, bro!
Loved the video and you're so🌡️here 😌
Lance: “Do the shift-a-roo!”
😁
🤣🤣🤣
Awesome video!!!
Hi Lance. Thank you for the video. How often do you do a cupping? Is it something you do with every time you get new beans? Are you looking for specific flavors to bring out? And how does cupping relate to brew method decisions? I know it’s a loaded question. Thank you!
Great video! Very informative :-) one question. Should the water temperature always be 97 degrees, no matter coffee variety/roast level etc?
Scott Ray oh, or Scott R ow-Oh which rhymes with ciao . Second way is the cool way b/c you can extend the pronunciation for many seconds, but I always did it the first way.
also that SCA recommendation of 1:18.18181818 seems so high. 1:17 I always thought was like the upper limit b/c I the shops I have spoken to seem to typically brew around 1:15. I think Klatch recommended to me 1:14 along time ago...maybe Klatch is kinda weird.
Scott Ray-Oh is the correct pronunciation. Can't remember what I said in this video, but I can confirm it is Ray-oh.
How many clicks on the Comandante would a cupping grind size be? Thanks! Highly informative video.
Brewler. Around 800 microns
I like around 600microns, similar to Scott rao
So, around 16-18 clicks or so
@@LanceHedrick woah, that is fine. i usually make my v60 with 25-28 clicks.
if I want to cup a darker roast, oily coffee is it okay with that hi temprature ?
@@LanceHedrick very cool. Definitely finer than most. I'll definitely give this a try. Thanks Lance.
The Golden Spoon 👌👌👌
From my friends at Luminous Coffee!
Should you drink water between the slurps not to cross-contaminate in your mouth? It seems like the first may affect the second etc.
Let's make a drinking game. When he says "Cupping" we drink 😆
Good luck. You'll need it haha! Like on how I met your mother with Robin's "but umm"
i just got to the point that i can try straight espresso to see if im tuned in i like it.
Great video as always! Still my favorite coffee channel 😉. One question seeing as how you have all of those coffee nerdrotic sifters, is there any chance that you know the avg. particle size that you're using?
I do not, but I'd venture to say somewhere around 500-600!
@@LanceHedrick ok cool, that tracks. I've been using Hoffman's method which is a 16.6/1 @ approx. 840 um, so 17/1 @ approx. 550 could be similar yet different... Color me intrigued.
Pls do a French press recipe Lance. Love u bro s2
Hey! Will definitely do so in the future!
Hi, great video as usual. What is your grind size typically for espresso if your cupping grind is at 24? Because I own a niche and 24 is close to what I grind for espresso.
I like around 500-600 microns! Quite fine
Some said you can also make brew plan from cupping. Is it true?
Cupping gives you the profile of your coffee, so you can plan around it. Certain profiles tend to express better with certain brew method, so with experience, cupping will tell you what will fit that coffee better.
Hey! I’m interested in doing a coffee start up and was wondering what your recommendations for starter cafe machines would be. Would a high-quality, home-style double, boiler machine work? Or is there something distinct about commercial machines?
I'm just curious sir Lance. You mentioned before that grind size and contact time affects extraction and at a fine grind reaching up to an hour of contact time when you let the coffee get cold, wouldn't that be overextracted?
Yeah! So, overextraction is a term i use to refer to the taste from pockets of overextraction (i.e. channels) cupping doesn't have channels. It is evenly extracted being immersion. That, plus the extraction will rapidly decrease after about 2 min because you're now extracting coffee with coffee
What grinder setting on df64 would you use for cupping?
04:40 Grind size fine end of med-fine, IOW between Aeropress and Espresso?
Am I crazy for choosing to not spit the coffee out because I hate the idea of it? Lol. Reminds me of dip spit. All the caffeine here!
Haha you may change your mind if you cupped 50-150 bowls daily for work hahaha!
Unrelated question. Why have a breville dual boiler and a decent espresso machine as well? Do they have different strengths?
I know you recommend the BDB, is the DE1 also recommended?
I think the decent is the best machine. The BDB can do most of what the decent can, but not with the same precision or tracking. Just two wholly different price points
A bit off topic, where did you get that drip tray for Decent machine to accommodate the lunar?
Shoot @euanlake on IG a direct message!
I'd love to get a hold of some Onyx coffees for cupping. seriously the packaging alone is making my taste bud receptor neurons(yes, that is a thing) explode!..
Haha where are you located?
@@LanceHedrick The land of the rising sun, Japan. No plans to expand?😅
make them close to asia region please aha
What brand is the white espresso machine?
use small ladle for a better cupping experience. trust me.
I've tried lots of spoons and cupped thousands of bowl. My favorites are in the video haha
Is there any way to account for the fact that after you taste a coffee after another coffee, it has to taste different than if you had not tasted that coffee before it???
Smell and therefore taste rely on contrast. I’m no professional but theoretically you should have a higher olfactory resolution
Awesome! Can't wait to try this out at home, I'll report in the discord on how it turns out. And I'll be sure to have a towel on hand to avoid any drippy drippy.
Love it! No one likes the drippy. And yes- let me know in discord!
I feel as if, when you brew coffee through immersion method, it is not as fragrant as a percolation brew. Am I crazy, or have others felt this too?
Nope! Not crazy. Likely oils covering it up, tbh.
Great content - love it. Please add your dog to the videos. :)
I had him in it and my editor took it out 🤣
I think you are rad
What is cupping
You forgot to reveal secret about teeth 😏
Hahahahaha true. Maybe in an advance slurp video hahaha!
I don't really care what coffee tastes like when steeped loosely in a cup and sucked out of a spoon because that isn't how I prepare or drink coffee. I care what it tastes like with pour over or drip and sipped from a mug. Judging coffee by the way it tastes when steeped loosely in a cup and sucked from a spoon seems kinda like judging a pair of shoes by wearing them on my hands. That's not how I use them so it doesn't really matter how they are on my hands
How do you make comparative tasting or triangulation with pourover? You need all three cups to have the same temperature, otherwise it will impact the comparison.
@@Yirgamalabar to taste a coffee I just make it as I normally would and drink it at the temperature I normally do. That's all I need to do in order to know how much I enjoy it
Cupping (as I understand it) is mainly understand what the coffee is supposed to taste like by removing the brewing method. If you don't like what a coffee tastes like during cupping, you're not gonna like the taste in a pour over
I don't cup coffee at home. I drink them TRADITIONALLY like it has been done for centuries
Why would I even waste my time listening for more than 1 min to a "guy" who presents himself to the world on video wearing track pants and a t shirt ( and not even a clean one . Sorry I clicked out in the first 30 seconds .
Awwww cry me a river, baby. So sorry you are stuck in the 1920s where clothes mean something.
