  • Tawa Pulav Recipe
    Ingredients
    Rice:
    Cooked rice: 1 cup
    Basmati rice: 1/2 cup (for soaking and cooking)
    Paneer:
    Paneer: 1/4 cup
    Vegetables:
    Carrots: 1/4 cup, finely chopped
    Beans: 1/4 cup, finely chopped
    Mixed bell peppers: 1/2 cup, finely chopped
    Spring onion: 1/4 cup, finely chopped
    Onion: 1/2 cup, finely chopped
    Tomato: 1 big, deseeded and finely chopped
    Masala:
    Cumin seeds: 1 tsp
    Garlic: 1 tbsp, chopped
    Red chili powder: 1 tsp
    Cumin powder: 1 tsp
    Black pepper: 1/2 tsp
    Salt: 1 tsp
    Pav bhaji masala: 2 tbsp (Everest brand recommended)
    Tomato ketchup: 1 tbsp
    Others:
    Oil: 1 tbsp
    Butter: 2 tbsp
    Coriander leaves: 1 tbsp, chopped (for garnish)
    Spring onion green part: 1 tbsp (for garnish)
    Method
    Prepare the Rice:
    Soak 1/2 cup basmati rice for 20 minutes.
    Boil the soaked rice in an open vessel with water and salt.
    Once cooked, strain the excess water and let the rice cool down.
    Apply 1 tsp oil to the rice and keep aside.
    Prepare the Vegetables:
    Finely chop all vegetables: carrots, deseeded tomato, onion, French beans, mixed bell peppers, spring onion, and coriander leaves.
    Prepare the Paneer:
    Chop the paneer into bite-sized pieces.
    Deep fry or shallow fry the paneer pieces and keep aside.
    Cook the Pulav:
    Heat a pan and add oil and butter. Let it get hot.
    Add cumin seeds and chopped garlic.
    Add onion, spring onion, carrots, beans, tomato, and mixed bell peppers. Sauté on high flame for 2 to 3 minutes until they are tender.
    Add the fried paneer, tomato ketchup, and dry masalas (red chili powder, cumin powder, black pepper, salt, and pav bhaji masala).
    Sauté nicely for a minute.
    Add the cooked rice and sauté lightly for another minute.
    Turn off the heat and add butter.
    Sprinkle chopped coriander leaves and spring onion greens.
    Serve:
    Enjoy tawa pulav with curd, raita, or papad.
    Raita Recipe
    Ingredients
    Curd: 1 cup
    Cucumber: 1/2 cup, grated
    Salt: 1/2 tsp
    Red chili powder: 1/2 tsp
    Cumin powder: 1 tsp
    Green chili: 1, finely chopped
    Coriander leaves: for garnish
    Method
    Whisk the curd.
    Add grated cucumber, salt, red chili powder, cumin powder, and green chili.
    Mix well.
    Garnish with coriander leaves.
    Serve with tawa pulav.
    Note for Jain Viewers
    Vegetable Substitutes:
    Use French beans, deseeded tomatoes, broccoli, and green peas.
    Follow the same recipe as above.
