I'm down to the last few bottles from the August 2022 batch, and the flavors are subtler than the batch from July 2023 (both 6 gallon batches). Bill's Bees sells their honey at my local farmer's market (northeast Los Angeles) as well as online. I have used their wildflower as well as the avocado blossom honey; it's all really good. I'll let them know they got a shout out. I also have the Brewer's Elite hydrometer kit, and it immediately became my preferred set (I have several). The glass tube makes it so much easier to see the numbers, and the color coding helps too. It's also a nice size, so that you don't have to put too much product in there to get a reading. I'd MUCH rather have a handy list of the items you use so when I'm ready to follow a recipe, and find that I am lacking an ingredient or tool (looking at you, raised number accupour pitcher... 😊), I can get exactly what you guys use while also supporting you guys a bit. Just a thought. I wonder if you got a little oil in your refractometer sample to throw it off. Playing with the numbers, to get to 8.6% ABV, the brix reading would have to be about 7°. Seems like something that could be experimented with - adding a little oil film to a sample and seeing how it impacts brix. I've used this method many times too and even for heavily back sweetened wines it has always been well aligned with my expectations and hand tracked numbers... In fact I have had a large discrepancy that turned out to be a mistake in my step feed point counting and after spotting and fixing that mistake both sg drop and sg+brix were spot on as usual 😊

I just started my first traditional mead recipe about a week ago following your guys' recipe and, seeing as I'm in Los Angeles, I also used Bill's Bees (though I'm using Orangeblossom). I noticed my must was also pretty dark so I wonder if it's just the honey lol. Did my best to aerate since I used the widemouth fermenter but probably didn't do it enough; regardless I'm 5 days along and the yeast is hard at work. Thanks for providing the most indepth and informative videos out there, they gave me the confidence to get started with this hobby!

We’re fortunate to have a Restaurant Supply store in Albuquerque. We bought several 8” heavy aluminum cake pans to hold our Big Mouth Bubblers during fermentation. If there’s a leak, the cake pans are between 2” and 3” deep and catch everything. The cake pans also provide a good stout base to move the bubblers around.

I just started making my very first mead thanks to your guidance!! I just finished racking it after about a week with minimal bubbling (I was sure to make sure to sanitize everything before racking and used an auto siphon to rack) and shortly after racking, I noticed more bubbling. A lot more. And it’s been about 2 days since and it’s kicked up from a bubble every 5-7 seconds to a bubble every 2-3 seconds. It also has some bubbles that won’t pop and look whiter than usual… just wondering if it’s fermenting into a vinegar? It smells like wine still, no off smells but just wanted to see what you thought about it. Thanks :)

Is the Lime juice higher or lower in Density than Water/ alcohol? Since it is comparing density to water, a lower density "could" be recognized as more alcohol?
Something I think that would be cool for you guys to try out, would be a mead with hot honey. More specifically honey infused with chilis or some kind of spicy pepper. Whether you make some yourself or can find one without too many added things, it would probably be interesting. Like a capsicumel or something where a little bit of heat fits well in the mead
I'm not sure how I feel about cilantro flavored mead, but I'd try it! I'm working on a pinch of peach mead. I had around 20 oz of peach juice left from the wine I made. To save money I was thinking of making a fruit wine (fig from my yard fruit) with sugar and just back sweetening with honey. My question is, is this still a mead? Thoughts on taste difference?

Great video! I was curious if you have ever tried to ferment Manuka honey. It has such a unique flavor profile I think it would make an excellent mead, but it is also touted for having incredible antimicrobial properties so it might kill any colony introduced into the musk. I would experiment, but the expense of three pounds of Manuka Honey is a little intimidating. Any information or suggestions would be welcome.
@75sklein while mānuka honey is antimicrobial, antifungal, antibiotic, etc, so is every other honey. While everyone touts the properties of mānuka, they forget to add the following words: when applied topically. In other words, when applied to your skin. When mānuka is consumed, it is just the same as every other honey. Also, with mānukas strong flavour profile, the mead it makes is an acquired taste. And, as you pointed out, the price point is excessive. You would be better off making a mead with a fairly neutral honey, then backsweetening with mānuka. This would subtly allow the flavours to come out, but not overpower the brew. Something like a spiced metheglin would work well for this as the flavours would be reasonably complimentary.

I have quite a bit of it for no particular reason since distilling is illegal in the States, but since watching your videos, I've wondered how it would work with mead or wine. My first batch finished fermenting and despite using 2lbs of blueberries it pretty much tastes like just alcohol. Dry not very sweet and almost no blueberry taste. Don’t know why but I’m gonna rack it tomorrow, stabilize and add more blueberries hopefully it will be fine kinda winging it

Left about a glass worth to try extra honey and it made the taste alot better so I have hope thanks for all the help I’m definitely gonna use concentrates I might use that recipe but with blackberry or raspberry concentrate instead definitely cheaper than whole fruits and cleaner thanks for turning me onto those.

I have a solution for your hand problem get you a bowl off camera put water in it and then get you a towel and that you can trust and you can hang up somewhere off camera and you can dip your hands in that and wash or rinse your hands in that way you wouldn’t have to leave to go to the sink to wash your hands and then come back just to suggestion
I hate avocado, but that's not why I'm here. I was at the store, and noticed that dole has fruit cups that are 100% natural. Just fruit, and fruits juice. This made me wonder, "can you use canned fruit salad to make wine"? Even if you can't use canned, I'm guessing those cups will make one mighty delicious wine/cider. If you do a video about it, I'm less likely to screw-up MY attempt.

The cilantro tea and lime juice both have dissolved solids that would affect your reading, even if it doesn’t affect fermentation.

Probably similar to water.

We have made capsimcumels before. Using hot honey might be a bad idea as they often contain preservatives. Better to add chiles to the must.

It's yeast and some potent nutrients. Not a fan tbh. Designed to make alcohol fast, but not necessarily tasty as it's meant to be distilled anyway.

We never use it. I won't be much help there.

Would actual avocado even work? or would the fats cause issues and possibly go rancid etc?
It won't ferment as much as spoil. Not really any sugars.
i sometimes get the film on meads... i wonder if its residual bees wax?
Film? Could be, but could be many things. Oils for example.

I have a solution for your hand problem get you a bowl off camera put water in it and then get you a towel and that you can trust and you can hang up somewhere off camera and you can dip your hands in that and wash or rinse your hands in that way you wouldn’t have to leave to go to the sink to wash your hands and then come back just to suggestion

I hate avocado, but that's not why I'm here. I was at the store, and noticed that dole has fruit cups that are 100% natural. Just fruit, and fruits juice. This made me wonder, "can you use canned fruit salad to make wine"? Even if you can't use canned, I'm guessing those cups will make one mighty delicious wine/cider. If you do a video about it, I'm less likely to screw-up MY attempt.

I add cilantro when I make guacamole too. I'm in the class of people who like cilantro.
Cilantro makes perfect sense in guacamole... and in this mead, for the same reason.
@@CitySteadingBrews did a lot of the astringency stay in the leaves. Cuz it’s the soapy bitter taste that throws my off
Some people taste soap, but not everyone. I happen to love cilantro.
