This feels really relevant for me right now for me. Currently grinding for the 500 golden balloons achievement and it's pain lol Though not as painful as those achievements that basically require you to play for 1 year or the Sapper Achievement. This looks to be a very fun but painful series. Good luck with them, you're going to need it.
I'm not sure what you are doing to grind it..bit worked for me was to play on beginner maps. Easy difficulty. I used sauda. Then get 012 ice St the end of track with 020 village. You will beat both gold blooms with that ice. Then as soon as you beat the 2nd floor, when that happens to be - could be 31 or on 40. But as soon as you beat it you can quit and start a new map. You'll still get credit. Took about 3 mins to farm 2 bloons.
For me cause I don't want to put my full attention onto it. I play on co-op on beginner maps on deflation that have golden balloons on it. Then I put down just one 2-0-4 ice monkey and I'm guaranteed to get 3 golden balloons every time. Is it the fastest? I'm not sure but it's definitely the easiest as I just need to put one tower down then I can go afk the rest of the game.
For sapper couldn't you make an infinite regrow farm in which a glue hose and tornado druid are used so the tornado keeps blowing off the glue and the glue hose keeps re applying it?

To simply explain the Davids vs Goliath achievement, not even those who were born in front of a pc with bloons pulled up and hasn’t left since is beating a boss with one tower

The achievement is called "Davids vs Goliath" be cause the normal towers represent David (just one), and since you need more than one tower to beat the level is is called "Davids", like the plural for David, because there is more than one tower
