Also, I have oil pastels, acrylic paints, and watercolor paints as mediums..... Have you found one works better than the other? Is it just whatever feels right to the artist? I prefer mixing mediums but I'm not sure if that's right/ok.

You could stay on the same canvas or get a new one. You could even make notes on the back of what the colors and shapes represent.
Mixing mediums is great. The oil based paints will take longer to dry so just be mindful of that.
