Parmigiana eggplants recipe, one of my most beloved dishes

- This is so good my friend....There is a bit of work but it well worth the effort
Ingredients:
2 big eggplants
400 gr tomato sauce
1 carrot
1/2 onion
1 stick celery
basil (for the sauce and for decoration)
flour (to fry the eggplants)
mozzarella (3 balls, 300 gr approx)
some parmesan cheese
salt and pepper (of course)
bake 20 minutes 180°C (356°F)
