I don’t think this is possible with MIT app inventor. This will most probably require working in Android Studio and I haven’t started android studio tutorials yet but I will keep your request in mind.
It was pretty accurate for me and my testers. Remember that MIT app inventor is more of a learning IDE and it isn't perfect. If you want more accuracy , use native programming language such as Java for Android devices.
I am assuming that you are talking about the apk generated from mit app inventor. You have to allow installations from unknown sources to test your app on your device.

I think I had set o.5 m as a stride length. You can go back to designer view and update the pedometer properties.
