sting rays fins are actually really thick and meaty. One really old food i read about is Australian aboriginal sting ray mash where they chew the fin meat into a paste like slury spit it out into a bowl then the whole tribe would eat this paste.

Hongeo-hoe is a type of stingray sashimi in korea. They eat stingray raw and it kinda smells like pee cos of the ammonia in it. I too like my stingrays raw with a little bit of funk.
