How to Make Delicious Latvian Bacon Dumplings | Speķa Pīrāgi aka Fat Pies

  • I grew up in Latvia as many of you will know. But I have not featured many Latvian breads here yet. These cured pork and onion filled dumplings will be the perfect introduction. Speķa pīrāgi literally translate to fat pies. It is because we call the salt cured and smoked pork belly ‘fat’. It does not meat that it is 100% fat though. You can get pieces that are leaner or fattier. For the purposes of this recipe, I would look for a 50/50 ratio of fat and lean meat, but whatever you can get your hands on will be good to go.
    These bacon dumplings are some of my favourite snacks from back home. And they are very popular over there. There are other variants too like ones filled with cabbage and onions or even cottage cheese and raisins. I might make videos about them in the future.

    I never heard Latvian spoken before. It’s sounds beautiful! My auntie was Latvian & Russian and her mom made those for Christmas & Easter. We all loved it so much it never made it to the table. Thank for sharing your recipe!💗

      Perhaps you could reduce the amount of water to compensate. I'm not too familiar with the T denominations, but the flour is definitely the culprit.

    I grew up with these! I got the recipe from my grandmother and hers had a lot of fat - a mix of lard and butter. Her recipe was also using an entire bag of flour and made hundreds of these at once. Sooooo excited to see this; my dad sent it to me since I got him into your channel.

    Thank you so much for letting your loyal chain baker group hear you speak Latvian! Glorious language---I've only known it in choral music. As to the dumplings, I'll definitely try a cottage cheese filling--maybe with some dill and chives? (Sorry, I know you said sweetened, but I like savory things a lot.) Appreciating the tip about twice-brushed egg wash; I'll do that on my 100% whole wheat brioche, that's in the final proof right now (as the sun goes down and it's finally cool enough to turn on the oven. And yes, please, more Latvian recipes!

    piragi hold so much nostalgia for me. my grandparents and great aunts/uncles were all from Latvia. each holiday us kids would devour the piragi. as we got older only my aunt made them and we would beg her to make extra. for some reason i never learned. i could taste them as you were making them! going to give them a try. i hope my kids love them as much as i did. but if not, more for me! thank you for this recipe and for hearing you speak your language.

    I am adding these to my to-do list for sure. One of my local markets has a huge Eastern European selection, in fact I often need to use the photo function on my Google Translate app to know what I'm buying. I've come close to buying pork belly exactly like this a few times, I'll take the plunge this weekend on my weekly Saturday morning visit.

    Very cool!! The closest thing to this that we have in Russia would be pirogi with minced pork and onion, however the filling would be cooked beforehand, I think I'm gonna suggest these to my grandma haha

    We lived in england my mother was latvian she lived in Riga she used to make piragi for us children it was fantastic very tasty brings back memories of my loving mum who passed away in 2018 I miss her badly a loving mum who I really miss

    Used this bread recipe as the wrapping dough to go with the bierock filling from Tasting History (plus some worcestershire sauce). Turned out excellent. The double egg wash trick is so simple and perfect for an eggcelent dinner. Ate it with some quick pickles from our garden and one of my dwindling supply of German Beer that I brought back on my last trip.

    I have tried this recipe yesterday, it has worked perfectly with a bit less hydration as my flour has a less protein percentage. My wife and I have smashed the 16 dumplings over dinner 😂😂😂.

    I'm definitely going to give these a try on my next all out meal. I enjoyed hearing the Latvian because I don't think I've ever heard it. I would also like to see more Latvian foods even ones that aren't bread maybe some family recipes?

    My partner's dad was Latvian & his mum made these for the family on occassion. She would despair though, because no sooner were they out of the oven than her husband & boys would descend & she barely got a look in. I've tried them, but the ones I had were cold. I was informed they're a lot nicer when they're still warm. They still went down without touching the sides & my partner was eyeing up the second one on my plate.

    I finally got my hands on some nice thick pork belly so I cured and smoked it and finally made these. I AM IN LOVE! I have extra filling and tomorrow I’m making more dough and probably more filling for another batch. Thankfully the bacon I cured was a 5-lb piece of belly, so I have plenty of bacon!

    These look amazing. Your recipes all do. I'm definitely adding Latvia to my list of places to visit. I'm 4th generation American but 50% eastern European descended on my Mom's side and the more I learn about eastern Europe, the more it reminds me of home in New England.

    Wow these are a must try. One of your best recipes so far. Would you go with speck or dry cured streaky bacon (can get that in slabs)? Was startled by hearing Latvian for the first time. It is always a good thing to express your heritage.

    i'm originally from Poland...blueberry buns are also hard to beat, as desert baking goes. please show a kneading technique for 1kg flour baking. i usually use that much for a bread or buns or pizza. i'm not weak but, it gets pretty hard and tiring, after only a few minutes.

    I found some fatty pancetta and fatty smoked bacon in the fridge, so I decided to give this recipe a try. OMG so wonderfully flavorful - the slightly chewy sweet bread perfectly complements the smoky, salty, peppery, oniony filling.     I just made these and they turned out very well, thank you! I had 16 dough balls of 28 g each and filled them generously. Even so, I ended up with a little over 100 g of left-over filling. 150 g of the speck and 90 g of onion are plenty enough to fill all of them.

    This is definitely one of the best snacks I had here in Latvia 😋 thank you for sharing the recipe, I look forward in making them myself!
    It would also be super cool to see other Latvian recipes! I love that pastry with cottage cheese in the middle and that sort of cinnamon roll but 200 times better than American cinnamon roll 😅 don't know their names though, hopefully you know what I mean!

    As a hungarian guy, I've grown up eating dumplings like these, or with some fruit/jam filling. I love these kind of snacks!

    I have made these a few times with another recipe but they don't turn out near as nice as yours. Also it's a recipe for what feels like a million buns. I think I'm going to have to try your recipe out. These look so good. And yes I can confirm, these are ~The Best Snack~

    I've got a butcher shop that's been in business 104 years about 6 miles from my home. They cut the smoked bacon that I buy from them off of the smoked port belly as I wait. I'm sure I can get them to cut a 1" or 2" wide strip and sell it t me. All of the meat that I buy from them is cut as I wait. There's a whole milk dairy about 15 miles west of me. I'm pretty lucky to have that. I'll have to give this recipe a try.

    They look sooo good! I need to find a butcher in my neighborhood to get cured and smoked pork belly. I want to eat a dozen of them with a few beers and have a nice nap 😎😁 The cabbage|onion and cottage cheese|raisin sound real good too.

    I baked this today, except my local tiny grocery store does not carry any super fancy meats so I just used a cheap bacon. Anyway, it turned out very good. Thanks for the recipe!

    Lovely stuff.
    Idk what it is, but i find it fascinating for many eastern european countries have their own traditional "Piragi", "Pierogi", "Пирожки" recipes. All seems to have same origin, but ever so slightly different from each other.
