    BEST pancakes I’ve ever tasted!!! Even before I became WFPB. My family was going crazy over them. Thanks, Jill!

    I love that you don’t measure every single thing. You know what you’re doing, you’ve probably made these a million times for your family. I just like your no-nonsense way of cooking. My husband and I had your eggplant recipe last night and I’ve never found anything to do with eggplants that my family will eat - until last night!!! Thank you. I was a health coach and ate mostly raw for over 4 years but now that I’m back eating cooked, it’s so nice to eat whole foods.

    To soften cheap dates ,
    soak them in boiling water for a few minutes than remove and blend with the milk.

    Made them this morning. Was craving something comforting and on the sweeter side that wouldn't cause inflammation in my body and this fit the bill! Had enough soy milk for 1.5x the recipe and got 20 one-quarter cup batter's worth of pancakes. I measured out all the wet ingredients, including flax, in a bowl to give them enough time to gel a bit and the dates soften while I measured the dry. Definitely recommend letting the prepared batter rest for about 10 minutes as my first pancakes were too wet and loose. The final product is tender and toothsome, a bit chewy and extremely filling with no sugar rush! Love them! Thanks so much for sharing with us!

    If you add apple cider vinegar to the plant milk it curdles and makes a faux buttermilk which adds a really nice flavour to pancakes and baked goods.

    I finally found a good non-stick pan so I'll be able to try these!!
    This is what I wrote about the pan in the comments for your lentil flatbread video:
    { "Thanks!
    I actually found a great pan that works perfectly with this.
    Costco sells a GreenPan 5.1 Quart Sauté Pan with Glass Lid for $19.97
    I already tried this lentil flatbread in it, and it was perfect!! No oil - no nothing. (I had already tried several different ways to cook this, but none really worked until I got this pan.)
    I honestly cannot fit another electric gadget in my tiny kitchen, plus those don't last long before they cook unevenly or develop burned hotspots.
    The key thing to know about oil-free cooking with these top-of-the-line non-stick pans is to never use high heat - never use metal utensils - never use cooking sprays (which we wouldn't anyway since we're all oil-free here) - I also don't scrub them (they clean very easily without the need for harsh soaps or scrub sponges) ... Just be patient with medium heat. I used 4.5 to 5 setting on my stove (10 is the highest).
    I won't be using this pan for sautéing any onions ... just flatbreads like these (I have a couple of other recipes too) and the pancakes you share in the next video.
    Thanks again! I LOVE this easy recipe (especially now that I found this pan)!!! ❤" }

    I love how your blender is so quiet! ❤️ I use my anodised aluminum roasting tin on two burners to fry my pancakes and that works quite well without oil, that might be a handy tip for others who do not want to invest into yet another gadget in the kitchen 🙂 The griddle you're using looks amazing, a bit bulky for my kitchen though!

    I love the way you look so happy to be cooking. I am trying to learn to like it. I am 74 and never liked cooking because I knew the stuff I was cooking and baking was not healthy for me but both my husbands were raised by old fashioned Moms who showered their sons with fattening foods and I could not really change them. My second hubby is with me and I told him “if you don’t like my Vegan food then buy your own. So he is trying it😀😍

    I tried these for the first time today. I love them! I finally can eat pancakes again 🫶🏽 I have changed my diet for some years now. I don't do wheat anymore and had to experiment on other ingredients for any foods I cook with flour base. I do love the oat flour but never thought about Buckwheat flour because of the name (wheat). Thank you for educating me on it being gluten-free. I am a happy camper. I was so happy for myself. The batter was perfect, and the blueberry sauce was awesome! Thank you, thank you! Love your channel. It has made me bold to experiment with making more vegan foods. Now that I feel comfortable making pancakes, I would do a whole banana and an extra deglet date 🥰🙏🏽🙌🏽
