Made them this morning. Was craving something comforting and on the sweeter side that wouldn't cause inflammation in my body and this fit the bill! Had enough soy milk for 1.5x the recipe and got 20 one-quarter cup batter's worth of pancakes. I measured out all the wet ingredients, including flax, in a bowl to give them enough time to gel a bit and the dates soften while I measured the dry. Definitely recommend letting the prepared batter rest for about 10 minutes as my first pancakes were too wet and loose. The final product is tender and toothsome, a bit chewy and extremely filling with no sugar rush! Love them! Thanks so much for sharing with us!

I love how your blender is so quiet! ❤️ I use my anodised aluminum roasting tin on two burners to fry my pancakes and that works quite well without oil, that might be a handy tip for others who do not want to invest into yet another gadget in the kitchen 🙂 The griddle you're using looks amazing, a bit bulky for my kitchen though!
we had a non stick griddle up high forever..never used it as i hate teflon and it can kill our birds..didnt realize it was a bella just like this..mom gave the teflon away and bought a bella without telling me..I LOVE, LOVE, LOVE it..just made a double batch of zucchini pancakes to freeze seeing as we are getting them from the garden.

I am 74 and never liked cooking because I knew the stuff I was cooking and baking was not healthy for me but both my husbands were raised by old fashioned Moms who showered their sons with fattening foods and I could not really change them. another tip: when you make pancakes let the batter sit for 10-15 minutes to let the reaction between vinegar and baking soda take place even more. It makes them even more fluffy

Hey Jill how are I have been away for awhile just been saving your recipes for my cooking and now after been Said that to avoid all oils I gave this version of my cooking 31 years vegan change no cook and frying with oils even in Mayo as well this show save A lot of in life food to stay healthy well I always have not been healthy with vegan foods because of fried with oil in my vegan foods but I can still enjoy my good vegan recipes without oils thank u your Fan Keisha Houston Ps.I never had No sugar dibetis or high blood pressure or type two diabetes yay

I have some buckwheat that I occasionally cook in the instant pot for breakfast instead of oatmeal. I wonder if I can just blend that to make buckwheat flour. I don't really want to buy buckwheat flour too.

Yeah, I have seen those and they look delicious but I’m pretty sure the only way it is possible to get that much rise is by using super refined flour 😢
Not all rolled oats are completely because they are processed in facilities that process grains that have gluten.. The package will say if it is gluten free.

To soften cheap dates ,
soak them in boiling water for a few minutes than remove and blend with the milk.

If you add apple cider vinegar to the plant milk it curdles and makes a faux buttermilk which adds a really nice flavour to pancakes and baked goods.
