I bought a dog off for an Amish guy and upper state. New York had to fill out the AKC registry paperwork inside with his wife, and when he walked me in to the living room, I saw their boiler, which was a woodstove with an indirect that you would find on your boiler in a welded piece on the top so that the hot water will flow into the heat exchanger and back out. Thought it was quite clever, but it’s no different than what we use in a boiler. I’ve got the same thing in my Oil fired while McLean fired steam boiler. You could use the sun to heat this also. At least in summer.
You don't need any electricity or controls for solar water heating. it is simple enough to make a system which uses a thermal syphon and is vented to atmosphere.

My wood stoves have jackets on the flues. Then a pump to feed radiators. Works really well. In theory you just have one open to a storage tank for hot water. Wood fired hot tub. That is great also. In old England.
Solar systems are done wrong. A solar system only depends on sunlight. Giving a limited use. Also. Having to use more solar panels and batteries. A simple 48v system takes care of most needs. That's only 4 batteries. Leaving only 1 400 watt solar panel needed to take care of the job. All depends on watts used. Think of a dam. Water is stored for use for energy. Then. A power plant provides extra energy to go down line. Simple system. 1 400-watt solar panel to a control. That goes to 1 100-ah battery. That's the water in the lake behind the dam. The power plant is 1 1,200-watt power converter. That leads to 2-amp battery chargers to 2 or 3 of the 4 batteries. That leads to a 48-volt power converter to be used. The 4 batteries are non-stop charged. This leads to enough energy to keep the 48v converter running 24/7. Making the solar system into an on sight power plant. Adjusting the dam part. More or less batteries. More or less solar panels. Leading to climate manly not being an issue.

This is dangerous cause you will create steam. The coil is a much better idea. The water jacket is just like you have on an engine block and that’s the cooling system and the fan, which is partially powered by the actual drive forward, pushing air into the heat exchanger or radiator coils. The boiling point of water is like 111 to 113°. I don’t remember at the moment. These things will heat up to 600° or more some will go up to 1000° and if you’re burning whack, Locust, or that kind of wood, you can get the heat really far up there. Your water is all going to turn to steam and if you don’t have a pressure valve, you’re going to have a problem
Probably not creating steam, & probably with a pressure relief valve to avoid pressure. Plus there might very well be a coil inside, just sheathed with black steel to hide the coil.
I know a few Amish and I have never seen the Amish. I know use the water blankets on wood stoves, but I have seen them. Use the woodstove to heat up a pot of boiling water so that they can take warm baths but also another thing that people say Amish don’t have but they do Amish do use electricity, nowadays, such as their buggies, the lights are powered by a car battery just like people say Amish do not have cell phones or landline but that is an absolute lie to most Amish have a cell phone or a landline for just in case of emergencies, such as getting their arm caught in the hay, Baylor or other things such as cutting your arm almost off by splitting wood. That's not a "traditional wood stove," those are stoves made from fifty-gallon steel drums. Traditional stoves were manufactured by an iron foundry, not homemade with a kit you can buy from a farm supply.
I don't think those drum wood stoves are being used by the Amish, but I could be wrong. Probably just easier for the YT creator to find stock footage for wood burning stoves.
Do any Amish heat their homes by , after insulating their barns, equipping their barns with heat pumps to transfer the heat from large animals to their homes? This, of course would require electricity from solar panels.

Hand fired boilers that burn wood or coal are common. You can buy them brand new. You can even get large outdoor ones

Every thing show here, heating water, is a boiler. Both hydronic and full steam production, no matter what is used to produce the needed heat.
